A potato has more potassium than a banana and is a very good source of fiber, magnesium, and vitamin B6. There are a lot of delicious and easy recipes you can make out of potatoes. 1. Loaded Potato & Cheese Sticks

Ingredients:

• 3 Russet Potatoes (cooked)
• 1/2 cup sour cream
• 1/4 cup green onions
• 1/4 cup bacon
• 1 tsp salt
• 1/2 tsp pepper
• Cheddar cheese sticks
• Breadcrumbs
• Plain flour
• 3 beaten eggs
• Oil for deep frying

Instructions:

In a mixing bowl, add cooked russet potatoes, sour cream, chopped green onions, and bacon bits.
Season with salt and pepper.
Mix and mash until well combined.
Scoop from the potato mixture.
Place the cheddar cheese stick in the center and wrap it around.
Coat with flour, dip into the egg mixture, then coat with breadcrumbs.
Do this with the remaining potato mixture.
Deep fry the breaded potatoes and cheese sticks until golden brown.
Transfer to a plate and serve with your choice of dip.

2. Scalloped Potato Roll

Ingredients:




• 6 potatoes (peeled and sliced thinly)
• 2 cups parmesan
• 2 tsp salt

• 2 tbsp olive oil
• 1 sweet onion (diced)
• 1 lb ground beef
• 14 1/2 oz can of diced tomatoes
• 3 tbsp parsley (chopped)
• 1 tsp paprika
• 1 tsp salt
• 1/2 tsp pepper

• 2 tbsp olive oil
• 6 cups spinach
• 1 tsp salt
• 2 garlic cloves (chopped)
• 1 cup ricotta
• 1 cup mozzarella (grated)

Instructions:

For the potato sheet:
Set a baking tray lined with parchment paper.
Sprinkle and spread parmesan cheese on it.
Lay the thinly sliced potatoes slightly overlapping vertically and horizontally.
Sprinkle and spread parmesan cheese on top of the potatoes.
Season with salt.
Bake for 30 minutes in a preheated oven at 350 F.

For the beef mixture:
Set a skillet over medium-high heat.
Heat olive oil.
Saute diced sweet onion until its translucent.
Add ground beef and let it cook until it changes color.
Add diced tomatoes and chopped parsley.
Season with paprika, salt, and pepper.
Stir and cook for a few minutes.
Remove from the heat.
Set aside.

For the spinach mixture:
In a separate skillet, heat olive oil over medium heat.
Add spinach, salt, and chopped garlic cloves.
Cook until spinach until wilted.
Remove from the heat and transfer to a bowl.
Add ricotta.
Mix until well combined.

Spread the spinach mixture on top of the potato sheet.
Spread the beef mixture on the next layer.
Sprinkle mozzarella.
Roll the potato sheet upward and make sure the ingredients are intact.
Bake for 15 minutes at 350 F.
Remove from the oven.
Slice into equal portions.
Serve and enjoy!

3. Creamy Bacon Chive Hasselback Potatoes

Ingredients:

• 4 potatoes (uncooked and unpeeled)
• 4 tbsp melted butter
• 1 tbsp garlic (chopped)
• 1 tbsp parsley (chopped)
• Salt and pepper to taste
• 1 lb bacon (sliced)

• 1 cup milk
• 8 oz cream cheese
• 1/4 tsp pepper
• 1/2 tsp salt
• 1 cup chives

Instructions:

Make crosswise slices on each potato and make sure not to slice all throughout.
Microwave each potato for 5 minutes.
Remove from the microwave and place on a parchment-lined baking tray.
Mix melted butter, chopped garlic, and chopped parsley in a small bowl.
Brush the mixture on the potatoes.
Season with salt and pepper.
Put a bacon in between the potato slices.
Bake for 30 minutes in a preheated oven at 425 F.
Remove from the oven and set aside.

Set a pan over medium heat.
Add milk and cream cheese.
Season with salt and pepper.
Stir and cook until cream cheese totally melts.
Add chives.
Stir and cook for a few minutes.
Remove from heat and transfer to a sauce bowl.

Serve the baked potatoes with the cream cheese mixture.
Enjoy!

4. Grilled Cheesy Potato Volcanoes

Ingredients:

• 6 potatoes (washed)
• 1.5 cups + 1.5 cups cheddar cheese
• 8 oz cream cheese
• 1 cup green onions (chopped)
• Bacon strips

Instructions:

In a mixing bowl, add 1.5 cups of cheddar cheese, 8 oz cream cheese, and 1 cup chopped green onions.
Mix until well combined.
Set aside.

Put a few holes on each potato.
Wrap each potato with aluminum foil.
Grill for 20 minutes at 400 F.
Remove from the grill and let it cool.
Unwrap each potato.
Cut the top and bottom edges of each potato.
Using a small spoon or a melon baller, scoop out in the center of each potato.
Make sure the walls are not too thin and don’t scoop all through the bottom.
Put the cream cheese filling inside.
Wrap each potato with bacon strips.
Secure the bacon strips with a toothpick.
Grill for 30 minutes at 350 F.
Sprinkle cheddar cheese on top of each potato.
Grill for additional 15 minutes.
Remove from the grill.
Transfer to a plate and serve.
Enjoy!

5. Loaded Ham & Cheese Potato Dippers

Ingredients:

• 5 lb Yukon gold potatoes (cooked)
• 2 cups cheddar cheese
• 4 oz cream cheese
• 16 oz bacon bits
• 1 bunch scallions (chopped)
• 1/2 tbsp salt
• 1/2 tbsp pepper
• 1 tbsp onion powder

• A pack of Ham
• Cheddar cheese (cut into small squares)
• 2 cups flour
• 8 beaten eggs
• 4 cups breadcrumbs
• Oil for deep frying
• Parmesan cheese (grated)
• Parsley (finely chopped)

Instructions:

In a mixing bowl, mash cooked Yukon gold potatoes.
Add grated cheddar cheese, cream cheese, bacon bits, and chopped scallions.
Season with onion powder, salt, and pepper.
Mix until well combined.
Spread evenly the mixture on a parchment-lined baking tray.
Set aside.

Take a small square of cheddar cheese.
Wrap it with a slice of ham.
Do another 20 pieces of it.
Press each ham and cheese into the potato mixture with enough space horizontally and vertically.
Cover all ham and cheese with the potato mixture.
Smooth the surface.
Freeze for 30 minutes.
Take it out and cut into equal squares, making sure each cut has a ham and cheese in it.
Coat each square with flour, dip into the egg mixture, then coat with breadcrumbs.
Deep fry until it turns into golden brown.
Transfer to a plate.
Garnish with grated parmesan cheese and finely chopped parsley.
Serve and enjoy!

6. Crispy Potato Tacos

Ingredients:

• 2 large potatoes
• 3/4 cup sour cream
• 2 garlic cloves (chopped)
• 1/2 tsp cumin
• 1/2 tsp oregano
• Salt to taste
• Corn tortillas
• Oil for deep frying

Instructions:

Peel potatoes and cut into smaller pieces.
Toss into a boiling water over medium heat.
Let it cook until the potatoes are soft enough to mash.
Transfer to a mixing bowl.
Add sour cream, chopped garlic cloves, cumin, oregano, and salt.
Mash the potatoes and mix until well combined.
Set aside.

Wrap corn tortillas with a damp towel.
Microwave for 20 seconds.

Scoop a potato mixture and spread on half of each corn tortilla.
Toss into heated oil and deep fry until cooked.
Transfer to a plate.
Top it off with your preferred garnishing.

7. Cheddar Ranch Potatoes

Ingredients:

• 9 potatoes
• 1/2 cup ranch dressing
• 1 tbsp garlic powder
• 1 tsp paprika
• 1 tsp salt
• 1/2 tsp pepper
• Cheddar cheese (grated)
• 1/4 cup chives (for garnishing)

Instructions:

Wash potatoes, unpeel, and slice into smaller pieces.
Let it boil for 10 minutes.
Remove from the heat and drain the water.
Add ranch dressing, garlic powder, paprika, salt, and pepper.
Mix it until well combined.
Transfer to a baking dish.
Bake for 30-35 minutes in a preheated oven at 400 F.
Sprinkle grated cheddar cheese.
Mix until well combined.
Garnish with chives.
Serve and enjoy!

8. Easy Homemade Gnocchi

Ingredients:

• 3-4 potatoes
• 1 tsp salt
• 1 tsp pepper
• 1 egg
• 1 – 1 1/2 cups flour

• 2 tbsp butter
• Sage leaf

Instructions:

Boil unpeeled potatoes until they are soft enough.
Peel and mash the potatoes in a mixing bowl.
Season with salt and pepper.
Mix until well combined.
Add an egg and mix well.
Transfer the potato mixture into a flat surface.
Add 1 – 1 1/2 cups flour.
Mix and knead the mixture until it becomes a dough.
Cut the dough into 4 portions.
Roll each dough into a long rope, preferably 1-inch in width.
Cut into 1/2-inch pieces.
You can make decorative ideas for the gnocchi.
Boil the pieces until they float.
Remove from heat, drain water, and transfer to a plate.
Set aside.

Set a pan over medium heat.
Melt butter.
Add sage leaf.
Add the gnocchi.
Stir and let it cook until the pieces are golden.
Transfer to a plate and serve.

9. Garlic Herb Roasted Potatoes

Ingredients:

• 13 Russet potatoes
• 1 tsp baking soda
• 1 tbsp salt

• 1/4 cup olive oil
• 2 tbsp garlic (finely chopped)
• 2 tbsp thyme
• 1/2 tsp pepper

• Salt and pepper to taste

Instructions:

Wash the potatoes and keep it unpeeled.
Cut into smaller pieces.

Set a pot over medium heat and fill with water.
Add 1 tsp baking soda and 1 tbsp salt.
Let it heat.
Add the potatoes and let it boil for 10 minutes.
Remove from heat and drain the water.
Let it sit for a minute to let moisture evaporate.

In a separate pot over medium heat, add 1/4 cup olive oil, 2 tbsp finely chopped garlic, 2 tbsp thyme, and 1/2 tsp pepper.
Stir and let it simmer.
Remove from heat.
Strain oil through a strainer over the potatoes.
Season with salt and pepper.
Toss carefully.
Transfer to a baking tray and spread evenly.
Bake for 70-80 minutes in a preheated oven at 425 F.
Flip the potatoes halfway.
Remove from the oven and transfer to a plate.
Serve and enjoy!

10. Potato Flower Breakfast Cups

Ingredients:

• 5 potatoes (washed)
• Water
• 2 tsp salt
• 1 tsp pepper
• 1 tsp paprika
• 1 tsp garlic powder

• 1 tbsp vegetable oil
• 2 cups cheese blend
• 5 bacon strips
• 12 eggs
• Salt to taste

Instructions:

Wash 5 potatoes and keep it unpeeled.
Thinly slice the potatoes with a knife or use a mandolin.
Place the potato slices in a large bowl.
Fill it with water and wash it.
Drain the water.
Add the seasonings – salt, pepper, paprika, and garlic powder.
Mix until well potatoes are well coated.

Set a 12-cup muffin tray.
Brush each cup with vegetable oil.
Arrange 5 potato slices slightly overlapping each around.
Place one slice on the bottom to create a flower.
Add cheese blend in each cup.
Bake for 10 minutes in a preheated oven at 400 F.
Remove from the oven.
Add bacon strips in each cup.
Add one egg on top of each cup and sprinkle salt.
Bake for 20-25 minutes at 300 F.
Remove from the oven.
Serve and enjoy!
