1. Toaster Burritos

Ingredients:

• 4 tortillas
• 3/4 cup red Leicester
• 1 cup beef chili
• 3 mixed bell peppers (chopped)
• 1/4 cup coriander

Instructions:

Lay tortillas.
Put red Leicester, beef chili, chopped mixed bell peppers, and coriander on each of the tortilla.
Roll it up and secure.
Toast for 4 minutes.
Serve with dips.
Enjoy!

2. Ultimate Grilled Cheesy Garlic Bread

Ingredients:




• 250 grams softened butter
• 1 cup mayonnaise
• 6 garlic (crushed)
• 1/2 cup parsley
• 1/4 cup chives
• 1 tbsp chili flakes
• 1 tsp salt
• 2 tbsp honey
• 2 tbsp lemon juice
• 1 cup parmesan
• 1 cup mozzarella
• 1 cup cheddar
• 1 bread loaf

Instructions:

Slice the bread loaf on an angle, but be careful not to slice it all through.
Set aside.

In a mixing bowl, add softened butter, mayonnaise, crushed garlic, parsley, chives, chili flakes, salt, honey, lemon juice, parmesan, mozzarella, and cheddar cheese.
Mix until well combined.
Scoop a mixture and put it in between each of the slices of the bread loaf.
Wrap the loaf with aluminum foil.
Put inside a preheated grill at 180 C.
Let it grill for 5 minutes.
Remove from the grill and open up the foil.
Grill again for 10 minutes.
Transfer to a plate.
Serve right away or serve with pasta.

3. Pizza Triangles

Ingredients:

For the filling:

• 400 ml Pizza sauce
• 150 grams mozzarella (grated)
• 100 grams pepperoni (diced)
• 1 tsp salt
• 1 tsp pepper

• 6 tortillas (cut in half)
• 2 tbsp flour
• 2 tbsp water
• Oil for deep frying

For the dip:

• 200 grams mayonnaise
• 1 tbsp oregano
• 1 tbsp pepper
• 1 tsp chili flakes
• 1 tsp salt
• 1 tsp sugar
• 1 garlic clove (crushed)
• 100 ml buttermilk

Instructions:

For the filling:

In a mixing bowl, add pizza sauce, grated mozzarella, and diced pepperoni.
Season with salt and pepper.
Mix until well combined.

Mix flour and water.
Fold the cut half of the tortilla to make a triangle.
Brush flour mixture on the edge to secure the triangle.
Scoop the filling and put inside each of the triangles.
Secure the opening by brushing it with flour mixture.
Set a pan for deep frying over medium-high heat.
Fry the pizza triangles until golden brown.
Remove from the heat.
Transfer to a plate.

For the dip:

In a separate bowl, add mayonnaise, oregano, pepper, chili flakes, salt, sugar, crushed garlic clove, and buttermilk.
Whisk until well combined.

Serve the pizza triangles with the dip.

4. Sticky Glazed BBQ Drumsticks

Ingredients:

• 1 kg chicken legs
• 100 grams brown sugar
• 1 tbsp white sugar
• 1 tbsp garlic powder
• 1 tsp pepper
• 1 tbsp mustard powder
• 1 tsp cumin
• 1 tbsp chili powder
• 1 tsp cayenne pepper
• 1 tbsp paprika

• 200 grams ketchup
• 100 grams brown sugar
• 100 grams cider vinegar
• 1 tsp Worcestershire sauce
• 1/2 orange (juiced)
• 1 tsp paprika
• 1 garlic clove (finely diced)
• 1 tbsp butter
• Salt and pepper to taste

Instructions:

In a mixing bowl, add all ingredients except chicken legs – brown sugar, white sugar, garlic powder, pepper, mustard powder, cumin, chili powder, cayenne pepper, and paprika.
Mix until well combined.
Coat the chicken legs well.
Lay on a baking tray.
Bake for 45 minutes in a preheated oven at 180 C.

While the chicken legs are being baked, set a pan over medium heat.
Add ketchup, brown sugar, cider vinegar, Worcestershire sauce, juiced orange, paprika, finely diced garlic clove, and butter.
Stir well until butter melts.
Season with salt and pepper.
Let it simmer.
Remove from the heat.

Remove the baking tray with the chicken legs from the oven.
Glaze each leg with the sauce mixture.
Bake for 10 minutes at 180 C.
Remove and transfer to a plate.
Serve and enjoy!

5. Croque Monsieur Mash Balls

Ingredients:

• 6 cups mashed potato
• 4 ham slices (chopped)
• 3 cups Emmental
• 2 tbsp dijon mustard
• 1/4 cup parsley (finely chopped)
• 1 tbsp salt
• 1 tbsp pepper

• 2 cups Panko breadcrumbs
• 4 beaten eggs
• 1 cup flour
• Oil for deep frying

Instructions:

In a mixing bowl, add all ingredients – mashed potato, chopped ham slices, Emmental, dijon mustard, and finely chopped parsley.
Season with salt and pepper.
Mix until well combined.
Scoop a mixture and form a ball.
Do this on the remaining mixture.
Let it chill for 30 minutes.

Dip each ball to the egg mixture.
Coat with flour and breadcrumbs.
Deep fry until the balls are golden.
Transfer to a plate.
Serve with dips and enjoy!

6. Pizza Churros

Ingredients:

• 1/2 cup butter
• 1 1/2 cups water
• 1 tsp salt
• 1 tsp pepper
• 1 tsp oregano
• 1/2 tsp basil
• 1 tsp onion powder
• 1 tsp garlic powder
• 1 1/4 cups plain flour
• 3 eggs
• 1 cup mozzarella
• Oil for deep frying

Instructions:

Put butter and water in a saucepan over medium heat.
Stir until butter melts and is well combined with water.
Add all seasonings – salt, pepper, oregano, basil, onion powder, and garlic powder.
Stir well.
Add plain flour.
Stir until it becomes a dough.
Remove from heat and let it cool for a few minutes.
Add 3 eggs and mix until well combined.
Add mozzarella and mix well.
Put the mixture inside a piping bag.
Heat oil in saucepan for deep frying.
Pipe about 3-4 inches of churros into the oil.
Let it fry for a few minutes or until golden brown.
Transfer to a plate.
Serve with dips of your choice and enjoy!

7. Cheesy Chicken Nugget Cones

Ingredients:

• Flour tortillas
• Grated cheddar
• 1/2 cup flour
• 2 beaten eggs
• 1/2 cup crushed cornflakes
• Oil for frying
• Chicken breast (cut into 2-inch strips)
• Diced lettuce
• Cooked fries
• Diced tomato
• Mayonnaise

Instructions:

Lay a flour tortilla on a baking tray lined with parchment paper.
Grate cheddar cheese on the tortilla.
Bake for 8 minutes at 150 C.
Remove from the oven and cut into half.
Fold and roll each to make a cone.
Let it cool for 10 minutes and set aside.

Coat 2-inch strips of chicken breast with flour.
Dip into egg mixture and cover well with crushed cornflakes.
Heat oil for frying.
Fry the breaded chicken breast strips for a few minutes or until golden brown and crisp.
Remove from heat and transfer to a plate.

Assemble the cheesy chicken nugget cones.
Put fries, diced lettuce, diced tomato, mayonnaise, and chicken strip into the cone.
Arrange the cones on a container.
Serve and enjoy!

8. Skillet Queso Chicken

Ingredients:

• 3 chicken breasts
• 3 tbsp Taco seasoning

• 2 tbsp oil
• 2 bell peppers (diced)
• 2 jalapenos (diced)
• 1/2 cup tomato salsa
• 1 tsp Chipotle sauce
• 1 tsp salt
• 1 cup cream
• 3 cups red cheddar (grated)

• Diced tomatoes
• Diced avocado
• Nacho bits
• Chopped coriander

Instructions:

Coat chicken breasts with taco seasoning.
Set a skillet over medium-high heat.
Heat 2 tbsp oil.
Fry the seasoned chicken breasts until cooked.
Remove the chicken and transfer to a plate.
Set aside.

In the same skillet, saute diced bell peppers and jalapenos.
Add tomato salsa and chipotle sauce.
Season with salt and stir well.
Add cream and stir it.
Let it simmer.
Add grated red cheddar.
Stir until the cheese melts.
Add the cooked chicken breasts and coat over with the sauce.
Let it simmer for a few minutes.
Remove the skillet from the heat.
Add diced tomatoes, diced avocado, nacho bits, and chopped coriander on top.
Serve each with yellow rice.

9. Stuffed Mac & Cheese Burgers

Ingredients:

• 400 grams cooked Macaroni
• 1 1/2 cups bechamel
• 10 rashers crispy bacon
• 1 cup grated mozzarella
• 1 1/2 cups grated cheddar

• 500 grams beef mince
• 2 tsp salt
• 1 1/2 tsp pepper
• 1 tsp garlic powder
• Oil for frying

• 2 cups flour
• 4 beaten eggs
• 2 cups breadcrumbs

Instructions:

Put cooked macaroni, bechamel, crispy bacon, grated mozzarella, and cheddar in a mixing bowl.
Mix well.
Set aside.

In a separate mixing bowl, put beef mince, salt, pepper, and garlic powder.
Mix until well combined.
Scoop from the mixture and form patties.
Set a frying pan over medium-high heat.
Heat oil and fry the patties until cooked.
Remove from the heat and transfer to a plate.

Scoop macaroni mixture and form like disk.
Place the beef patty on top.
Scoop another macaroni mixture to put on top and secure.
Coat each with flour followed by egg mixture then breadcrumbs.
Fry each until golden brown.
Serve and enjoy!

10. Nacho Fried Chicken Dippers

Ingredients:

• 3 chicken breasts (cut into bite-size pieces)
• 1 cup seasoned flour
• 3 whisked eggs
• 2 bags crushed cheese tortilla chips
• Oil for frying

• 1 can evaporated milk
• 2 cups cheddar
• 2 tbsp corn starch
• 2 tbsp hot sauce

Optional:

• Diced tomatoes
• Chopped parsley/green onions

Instructions:

Coat bite-size chicken pieces into seasoned flour followed by egg mixture, then crushed cheese tortilla chips.
Set a frying pan over medium heat.
Heat oil and fry the breaded chicken pieces until golden brown.
Remove from the pan and transfer to a plate.
Set aside.

Set a saucepan over medium heat.
Add evaporated milk, cheddar, and corn starch.
Stir until the cheese melts.
Add hot sauce.
Stir well.
Remove from heat and transfer to a sauce bowl.
Garnish with diced tomatoes and chopped parsley/green onions.
Serve together with the fried chicken pieces.

11. Bangers & Mash Dogs

Ingredients:

• 4 cups mashed potato
• 1 cup cheddar
• 6 rashers crispy bacon
• 1/2 tsp salt
• 1 tsp pepper
• 6 cooked sausages

• 1 cup plain flour
• 2 whisked eggs
• 2 cups seasoned breadcrumbs
• Oil for frying

Instructions:

Put mashed potato, cheddar, crispy bacon, salt, and pepper in a mixing bowl.
Mix until well combined.
Scoop a mixture and put on your hand.
Put a cooked sausage in the center and wrap it with the potato mixture.
Do this with the remaining cooked sausages.
Coat each mash dog with plain flour followed by whisked eggs, then seasoned breadcrumbs.

Set a frying pan over medium-high heat.
Heat oil and fry the mash dogs until golden brown.
Transfer to a plate and serve with the dip of your choice.
Enjoy!

12. Jalapeno Popper Meatball Loaded Fries

Ingredients:

• 750 grams beef mince
• 1 whisked egg
• 1/2 cup panko breadcrumbs
• 4 jalapenos (finely chopped)
• 6 slices bacon (cooked and chopped)
• 1/2 cup cream cheese
• 2 garlic cloves (finely diced)
• 1 cup cheddar cheese
• Salt and pepper to taste
• Oil for frying

• 1 tbsp butter
• 2 tbsp plain flour
• 1 cup beef stock
• 1 1/4 cup heavy cream
• 1 cup cheddar cheese
• Sliced jalapenos
• Salt and pepper to taste

• Cooked fries
• Finely chopped parsley (for garnishing)

Instructions:

In a mixing bowl, put beef mince, whisked egg, panko breadcrumbs, finely chopped jalapenos, bacon slices, cream cheese, finely diced garlic cloves, and cheddar cheese.
Season with salt and taste.
Mix until well combined.
Scoop from the mixture and form into small meatballs.

Set a frying pan over medium heat.
Heat oil.
Fry the meatballs until cooked.
Remove from heat and set aside.

Set a separate frying pan over medium heat.
Melt butter.
Add plain flour and stir it.
Add beef stock and heavy cream.
Stir and let it simmer.
Add cheddar cheese and sliced jalapenos.
Season with salt and pepper.
Stir well until cheese melts.
Add the meatballs.
Stir it and coat the meatballs well.
Remove from heat.
Pour the mixture on top of cooked fries.
Garnish with finely chopped parsley.
Serve and enjoy!

13. Creamy Skillet Fajita Chicken

Ingredients:

• 4 chicken breasts
• 1 1/2 tbsp Fajita seasoning
• 2 tbsp oil

• 1 onion (thinly sliced)
• 3 mixed bell peppers (sliced)
• 2 garlic cloves (minced)
• 1 1/2 tbsp Fajita seasoning
• 1 cup Passata
• 3/4 cup heavy cream
• 1/2 cup cheddar (grated)

• Chopped coriander (for garnishing)

Instructions:

Coat chicken breasts with Fajita seasoning.
Set a skillet over medium-high heat.
Heat oil and fry the seasoned chicken breasts until browned.
Remove the fried chicken and set aside.

In the same skillet, saute onion and mixed bell peppers.
Add minced garlic and Fajita seasoning.
Mix well.
Add passata and heavy cream.
Stir well and let it simmer.
Add the fried chicken and coat over with the sauce.
Let it simmer for a few minutes.
Add grated cheddar.
Remove from heat and grill for 5 minutes at 180 C.
Garnish with chopped coriander.
Serve with rice.
Enjoy!

14. Cheese Taco Shells

Ingredients:

• 1 cup cheddar (grated)
• 1/2 tsp flour
• Fillings of your choice such as beef mixture, diced tomatoes, sliced avocado, mayonnaise etc.

Instructions:

Mix grated cheddar cheese and flour.
Spoon a mixture and lay it on a parchment-lined baking tray.
Bake for 8 minutes at 200 C.
Remove from the oven and lay it over a rolling pin.
Leave it to cool.
Serve with fillings of your choice – beef mixture, diced tomatoes, sliced avocado, mayonnaise etc.
Enjoy!

15. Red Velvet Pancakes

Ingredients:

• 2 cups plain flour
• 1 tbsp baking powder
• 1/2 tsp baking soda
• 1/4 tbsp salt
• 1/2 cup sugar
• 3 tbsp cocoa powder
• 1 1/2 cup milk
• 2 eggs
• 1/3 cup melted butter
• 2 tsp vanilla
• 2 tbsp vinegar
• 1 tbsp red food coloring

• 1 cup cream cheese
• 1/3 softened butter
• 1/2 tbsp vanilla
• 2 cups icing sugar
• 1/4 cup milk

• Sliced strawberries and blueberries for toppings

Instructions:

In a mixing bowl, add plain flour, baking powder, baking soda, salt, sugar, and cocoa powder.
Whisk until well combined.
Add milk, 2 eggs, melted butter, and vanilla.
Whisk until well combined.
Add vinegar and red food coloring,
Mix until the mixture turns red.
Set a non-stick frying pan over medium heat.
Ladle a mixture and pour into the pan forming a pancake.
Let it cook until bubbles pop up.
Flip over the other side and cook for 30 seconds.
Repeat this with the remaining mixture.
Transfer to a plate and stack the pancakes.

In a separate mixing bowl, add cream cheese and softened butter.
Mix until well combined.
Add vanilla, icing sugar, and milk.
Whisk until texture is smooth.
Pour mixture to the stack of pancakes.
Top it off with sliced strawberries and blueberries.
Serve and enjoy!

16. Creamy Ranch Chicken Pasta

Ingredients:

• 1 tsp salt
• 1 tsp white pepper
• 1 tsp onion powder
• 1/2 tsp garlic powder
• 1/2 tsp cayenne powder
• 1 tsp oregano
• 2 chicken breasts

• 2 tbsp butter
• 2 garlic cloves (finely chopped)
• 2 cups double cream
• Salt to taste
• 2 tbsp parsley (finely chopped)
• 1 tsp oregano
• Cooked pasta
• Pasta water

Instructions:

Slice the chicken breasts in half.
Mix all seasonings – salt, white pepper, onion powder, garlic powder, cayenne, and oregano.
Coat the chicken with the seasoning mixture.

Set a frying pan over medium-high heat.
Melt butter.
Fry the chicken breasts until browned.
Remove the fried chicken and transfer to a plate.
Cut into strips and set aside.

In the same frying pan, saute finely chopped garlic cloves.
Add double cream and salt to taste.
Stir it and let it simmer.
Add finely chopped parsley, oregano, and fried chicken strips.
Stir well to coat the fried chicken.
Add cooked pasta and some pasta water.
Mix until well combined.
Remove from the heat.
Transfer to a plate.
Serve and enjoy!
