3 Easy Healthy Salads

Salads are light, easy to make, and versatile. You can add as much or as little ingredients depending on what you like. These 3 salad recipes only have 5 or less ingredients. All the dressings are just whisked together and then poured over the salad.

These recipes are perfect for busy weekdays when you want to prepare healthy meals beforehand. 100% vegan and no cooking involved, these 3 salad recipes are worth trying to believe.


Kale + Cabbage Crunch
• 4 cups of kale
• 3 cup of red cabbage, chopped into thin strips
• 4 carrots, chopped
• 1 avocado, diced

• 2 tbsp of extra virgin olive oil
• Half a cup of apple cider vinegar
• 1 clove of garlic, crushed
• 1 tsp of honey
• Salt
• Pepper

Chunky Greek Salad
• 4 small Persian cucumbers
• 1 cup of baby tomatoes
• 1 cup of garbanzo beans
• 1/4 cup of red onion
• Half a cup of kalamata olives

• 2 tbsp of extra virgin olive oil
• 3 tbsp of balsamic vinegar
• 1 tsp of dried oregano
• 1 clove of garlic, crushed
• Salt
• Pepper

Quinoa + Black Bean Salad
• 2 cups of cooked quinoa
• 1 cup of black beans
• 1 up of red bell pepper
• 1 avocado
• 1/3 cup of scallions

• 2 tbsp of extra virgin olive oil
• 1/4 cup of lime juice
• 1 clove of garlic, crushed
• 1/8 tsp of ground cumin
• Salt
• Pepper


Each salad recipe takes about 5 to 10 minutes to make.

Kale + Cabbage Crunch

Serves 4.

In a large bowl, add all of the salad ingredients.
In a separate bowl, whisk together all the ingredients for the dressing.
Pour the dressing onto the salad and mix well.

Chunky Greek Salad

Serves 2 to 4.

Mix all the ingredients for the dressing and pour over the salad. Mix well.

Quinoa + Black Bean Salad

Serves 2 to 4.

Mix all of the ingredients for the dressing and pour over the salad.
Adjust seasoning according to taste.

Ideas and Tips:

• You can add more ingredients to the salad based on what you have on hand. You can add corn, spinach, mushrooms, basil, and seeds.
