Avocado Pasta (Easy, Healthy, Delicious Dinner Recipe)

A great way to incorporate your leafy greens in your diet in a subtle way is by mixing it with pasta. This dish is literally just two steps: cook the pasta, and blend the ingredients together to make a sauce. The bonus is that the sauce has a vibrant and rich green color packed with vitamins and minerals from avocado, spinach, and basil. So easy and so delicious that even kids won’t notice all the green leafy goodness in this pasta recipe.

This recipe takes about 10 minutes to make. Serves 3.


Ingredients:

• Half a pound of pasta
• 1 avocado
• Half a cup of spinach
• One-quarter cup of basil
• 1 garlic clove
• 2 tbsp of slivered almonds
• Half a cup of pasta water
• 1 tbsp of oil
• Salt

Instructions:

First, boil water in a pot. Cook the pasta according to the package instructions.
Add some salt into the pasta water.
Drain the pasta and set aside.
To make the sauce, blend all of the ingredients: avocado, spinach, basil, garlic, oil, salt, and almonds.
Pour some pasta water and blend together until smooth.
Add the sauce to your pasta and add more pasta water to coat all of the pasta.

Ideas And Tips:



• Aside from spinach and basil, you can add more vegetables into the sauce. Try adding some kale, zucchini, or parsley. Experiment with different vegetables according to your preferred taste and texture.

• You can substitute almonds with other nuts, or leave it out altogether. You can use walnuts, pine nuts, cashews or peanuts. If you are allergic or not really a fan of nuts, you can add chia seeds to the mix.
