Baked Banana Oatmeal

A cold and lazy morning calls for a warming breakfast like a bowl of oatmeal. If your bored of the traditional oatmeal though, it’s time to make baked oatmeal. Baked oatmeal is a fabulous Amish dish that delights every breakfast lover. It is a heavenly pudding-like breakfast treat that is more delightful and exciting to eat than a regular oatmeal. It is crusty on the outside but moist and bursting with flavors on the inside. With this recipe, you can make a delicious and healthy baked banana oatmeal in less than an hour. If you are having people over for a weekend brunch, this dish is absolutely perfect.

Ingredients:

• 2 cups of dry rolled oats
• 1 tsp baking powder
• ¼ tsp salt
• 1 tsp cinnamon
• 1 banana, peeled
• 2 egg whites
• 1 ½ cups of 2% milk
• 2 bananas, sliced into medallions
• 1 tsp vanilla extract
• 1 tbsp turbinado sugar

Instructions:

This recipe takes about 40 minutes to make. Serves 4.

Preheat oven to 375°F.
Put rolled oats, baking powder, salt, and cinnamon in a large mixing bowl.
Using clean hands, mix all the ingredients together.
Put 1 banana in a bowl and mash it.
Add egg whites, milk, and vanilla extract, then mix well.
Pour the wet ingredient mixture into the bowl of oats, then mix well.
Coat an 8″x8″ metal baking pan with coconut oil.
Arrange banana slices at the bottom of the baking pan.
Carefully pour the oat mixture into the pan, then evenly spread the top.
Arrange banana slices on top, then sprinkle turbinado sugar on top.
Bake in the oven at 375°F for 25 minutes.
Remove the baking pan from the oven and let it cool for a few minutes before slicing and serving.

Ideas And Tips:

• Aside from bananas, you can use peaches.

• You can also add slivered almonds.

• You can use non-dairy milk such as almond milk, soy milk, cashew milk, hemp milk or rice milk.
