Breakfast Muffins 3 Delicious Ways

These delicious breakfast muffins are perfect for busy people. These muffins are easy and quick to prepare. You can make them ahead of time and store them in the fridge. There are three delicious flavors that you can prepare – blueberry banana muffins, spiced carrot and apple muffins or bacon and egg muffins.

1. Blueberry Banana Muffin

Ingredients:

• 1 cup all-purpose flour
• 1 cup whole wheat flour
• 1/2 cup sugar
• 1 tbsp baking powder
• 1/2 tsp salt

• 2 eggs
• 1/4 cup melted butter
• 1 cup yogurt

• 2 ripe bananas (diced)
• 1 tsp vanilla extract
• 1 tsp chai spice
• 1.5 cups blueberries

Instructions:

In a bowl, add all-purpose flour and whole wheat flour.
Add sugar, baking powder, and salt.
Mix until well combined.
Set aside.

Preheat oven to 375 F.

In another bowl, crack open eggs.
Add melted butter and yogurt.
Mix until well combined.
Add ripe banana slices.
Mash the banana in the mixture and mix well.
Pour into the flour the mixture.
Mix until well combined.
Add vanilla extract, chai spice, and blueberries.
Mix until batter us week combined.
Set aside.

Prepare a muffin tray with muffin cups in it.
Fill each muffin cup with the batter.
Place inside the preheated oven and let it bake for 25-30 minutes.
Remove from the oven and let it cool for a few minutes.
Serve and enjoy!

2. Spiced Carrot & Apple Muffin

Ingredients:

• 1 cup all-purpose flour
• 1 cup whole wheat flour
• 1/2 cup sugar
• 1 tbsp baking powder
• 1/2 tsp salt

• 2 eggs
• 1/4 cup melted butter
• 1 cup yogurt

• 1/2 cup applesauce
• 1 tsp cinnamon
• 1/4 tsp ground ginger
• 1 tsp vanilla extract
• 2 carrots (grated)
• 2 small apples (grated)

Instructions:

In a bowl, add all-purpose flour and whole wheat flour.
Add sugar, baking powder, and salt.
Mix until well combined.
Set aside.

Preheat oven to 375 F.

In another bowl, crack open eggs.
Add melted butter and yogurt.
Mix until well combined.
Add applesauce into the mixture and mix well.
Add cinnamon, vanilla extract, and ground ginger.
Mix well.
Add grated apples and carrots.
Mix batter until well combined.
Set aside.

Place inside the preheated oven and let it bake for 25-30 minutes.

3. Bacon & Egg Muffin

Ingredients:

• 1 cup all-purpose flour
• 1 cup whole wheat flour
• 1/2 cup sugar
• 1 tbsp baking powder
• 1/2 tsp salt

• 2 eggs
• 1/4 cup melted butter
• 1 cup yogurt

• 4 bacon strips (cooked and chopped into bits)
• 2 hard-boiled eggs (chopped into bits)
• 2 green onions (finely chopped)
• 1 cup sharp cheddar cheese (shredded)

Instructions:

In a bowl, add all-purpose flour and whole wheat flour.
Add sugar, baking powder, and salt.
Mix until well combined.
Set aside.

Preheat oven to 375 F.

In another bowl, crack open eggs.
Add melted butter and yogurt.
Mix until well combined.
Add bacon bits, hard-boiled egg bits, shredded cheddar cheese, and chopped green onions.
Mix until well combined.
Set aside.
