Cheese Stuffed Mushrooms | Mushroom Recipe

This cheese stuffed mushrooms recipe from Chef Varun is perfect as an appetizer, snack, or side dish. The mushroom caps are stuffed with cheese and a savory onion-based filling. It has a perfect balance of cheesy and spicy flavor. It takes about 15 minutes to prepare and cook.

Ingredients:

• 10-15 button mushrooms
• 2 tbsp oil

• 1/2 tsp cumin seeds
• 1 green chili (chopped)
• 1 tsp garlic (finely chopped)
• 1 tsp ginger (finely chopped)
• 1 cup red onions (finely chopped)
• salt to taste
• 1 tsp red chili powder
• 1/4 tsp turmeric powder
• 1 tbsp black pepper powder
• 1/2 cup tomatoes (diced)
• 2 tbsp coriander leaves (chopped)
• 1 processed cheese (grated for the filling)

• 1/2 cup processed cheese (grated for garnishing)

Instructions:

Remove the stems of each button mushroom.
Carefully scrape off meat of each button mushroom.
Set the mushroom caps aside.

Finely chop the stems and meat of the mushrooms.
Set aside for later use.

Set a frying pan over medium-high heat.
Add 2 tbsp of oil and heat it.
Add cumin seeds, chopped green chili, and finely chopped garlic and ginger.
Saute for 30 seconds until fragrant.
Add finely chopped red onions and salt to taste.
Saute for 1 minute or until onions are soft.
Add diced tomatoes, chopped mushrooms, and half of the chopped coriander leaves.
Add seasonings – red chili powder and turmeric powder.
Mix and cook until cooked.
Switch off the heat.
Add grated processed cheese.
Mix until cheese is melted and well combined while still hot.
Season with black pepper powder.
Mix well.

Fill each button mushroom cap with the mixture.
Sprinkle grated processed cheese on top of each mushroom.
Set a pan over medium heat.
Add a little bit of oil and heat it.
Place the stuffed button mushrooms in the pan.
Cover the pan.
Let it cook for 3-4 minutes.
Once done, remove from the heat and transfer stuffed mushrooms to a plate.
Serve and enjoy!
