Cottage Fries – Easy Oven-Fried Potato Rounds

Potatoes are very popular ingredients in side dishes. Mashed potatoes, French fries, and potato wedges are fast food staples. Cottage fries are sliced round potatoes seasoned with herbs, salt, and pepper. Baked until crispy and golden brown, these potato discs are perfect as snacks.

Cris and crunchy on the outside, but soft and creamy on the inside. Cottage fries are named after the roof shingles on cottages, as they resemble in shape.

Ingredients:

• 4 russet potatoes
• 1 tbsp of olive oil
• Salt
• Black pepper
• 1 pinch of cayenne
• 1 pinch of herbes de provence

Instructions:

This recipe takes 1 hour to make. Serves 4.

Rinse the potatoes to remove dirt from the skin.
Slice the potatoes into 3/8 inch thick.
Rinse the sliced potatoes with cold water.
Drain and pat dry with paper towels.
Season with salt, cayenne, and dried herbs.
Mix well to make sure all the slices are coated.
Preheat the oven to 425F.
Place the potato slices on a baking sheet.
Sprinkle salt on top.
Bake the potatoes for 15 minutes.
Flip the slices and bake again for 15 minutes.
Transfer the potato slices to cooling racks.
Place back in the oven for 8 to 10 minutes until crispy and golden brown.

Ideas And Tips:

• A favorite combination of herbs for this dish is thyme, rosemary, oregano, savory, and marjoram. These make up “herbes de provence”. It is a mixture of dried herbs that originated from the Provence region of southeast France. In the American market, lavender leaves are added to the mix.
