Creamy Cheesy Scalloped Potatoes Recipe

Ingredients:

• 4 ½ cups of thinly sliced Russet potatoes
• 3 tbsp chopped onions
• 3 tbsp margarine or butter
• 3 tbsp all-purpose flour
• 3 cups of evaporated milk
• 4 cups of shredded cheddar cheese
• 1 ½ tbsp salt
• 1 tsp garlic powder
• ½ tsp black pepper
• ½ tsp dried parsley
• ½ tsp paprika
• ¼ tsp cayenne pepper

Instructions:

This recipe takes about an hour and 45 minutes to make. Serves 6 to 8.

Heat a pot over medium-high heat.
Melt butter and sauté onions for about a minute.
Sprinkle all-purpose flour and continue sautéing for about 2 to 3 minutes or until the flour has lightly browned.
Pour in milk and stir well for about a minute.
Add salt, garlic powder, black pepper, and cayenne pepper and stir.
Add 3 cups of shredded cheese and stir until the cheese melts and the sauce has thickened.
Turn off heat.
Spread about 1/2 cup of cheese sauce on a glass baking dish.
Arrange half of the sliced potatoes and spread half of the cheese sauce on top.
Arrange the rest of the potato slices to make a second layer and spread the remaining cheese sauce on top.
Top it off with the remaining shredded cheese.
Sprinkle paprika and dried parsley on top.
Cover the baking dish with aluminum foil.
Bake in the oven for 1 hour at 350°F.
Remove the aluminum foil and bake for another 20 to 30 minutes.
Let this cool for a bit so the casserole firms up and sets nicely before slicing and serving.

• You may also add slices of ham while layering the potato slices or top off the dish with crispy bacon bits.

• If you want a crusty top, mix panko breadcrumbs with melted butter. Spread the mixture on top of the dish before baking in the oven.
