Easy 10-Minute Vegan Recipes For Lazy People

Eating 100% vegan is not complicated. These 3 vegan recipes are budget-friendly, very easy, and only takes about 10 to 15 minutes each to make.

There is no excuse now to not eat healthy. These are perfect for busy school or work days, you want to prepare some food before getting caught up in the day. Each one is good for 1 serving, so these are great if you are just cooking for yourself.

Ingredients:

Creamy Pumpkin Pasta:

• 2 servings of pasta
• 1 cup of pumpkin puree
• 1 tbsp of olive oil
• 5 cloves of minced garlic
• 1 cup of coconut milk
• Salt

Sriracha Udon Stir-fry:

• Chopped mixed vegetables
• Half a block of soy tofu
• 1 package of pre-cooked udon noodles
• 1 tbsp of soy sauce
• Half a tbsp of garlic powder
• Half a tbsp of maple syrup
• Half a tbsp of sesame oil
• 2 tbsp of Sriracha
• Toasted sesame seeds

Rice Vermicelli With Peanut Sauce:





• 1 serving of rice vermicelli noodles
• Mixed vegetables

Sauce:

• 1 tbsp of peanut butter
• 1.5 tbsp of rice vinegar
• 1 tsp of ginger
• Half a tbsp of garlic powder
• Half a tbsp of maple syrup
• 1 to 2 tbsp of water

Instructions:

Each recipe takes about 10 to 15 minutes to make.

Creamy Pumpkin Pasta:

Serves 2.

Follow package instructions to cook the pasta.
In a pan, add oil and garlic over medium-high heat.
When the garlic turns brown, lower down the heat to low-medium.
Add pumpkin puree and coconut milk.
Season with salt.
Stir for a few minutes on low heat.
Transfer pasta to the sauce and serve.

Sriracha Udon Stir-fry:

Serves 1.

Stir fry vegetables.
Season with soy sauce, garlic powder, sesame oil, Sriracha, and maple syrup.
Crumble tofu into the mix.
Add udon noodles and stir.
Sprinkle sesame seeds and serve.

Rice Vermicelli With Peanut Sauce:

Serves 1.

Boil some water.
In a big bowl, add vermicelli noodles.
Chop vegetables and add to the hot water with the noodles.
After 6 to 10 minutes, check if the vegetables are tender.
Drain them and transfer to a plate.
Mix all of the sauce ingredients. Add more water if the sauce is too think.
Stir noodles and vegetables with the sauce until well coated.

Ideas And Tips:

• You can also opt to steam your vegetables so that they are still crunchy and green rather than boil them.

• Add more vegetables depending on what you have on hand.
