Easy Egg Bake Recipe

Breakfast casserole is becoming a favorite not only because it is easy to make, but it can also feed a crowd. It is perfect if you are having company for breakfast or brunch. Imagine all the time you’ll spend if you will serve omelet to your guests. Not only is it time-consuming, but it can be very tedious and stressful to achieve a perfectly folded omelet every time. For egg casserole, all you have to do is put everything in a baking dish, bake in the oven, slice and serve. No more worrying about the egg falling apart while flipping, or struggling to get all the filling in the egg.



This egg bake recipe looks like a frittata but a lot easier to make. The egg is cooked entirely in the oven, unlike frittata where the egg is cooked first on the stove then finished in the oven. The milk and cheese added to the egg make this dish creamy and moist. This is best served on a bed of salad.

Ingredients:

• 10 eggs
• 1 cup of milk
• 1 cup of chopped green onions
• 3 cloves garlic, finely chopped
• 2 cups of shredded cheese
• 1 cup of sliced mushrooms
• ½ cup of chopped bell peppers
• ½ cup of chopped artichoke hearts
• ½ cup of chopped tomatoes
• 1 jalapeno pepper, chopped
• 1/4 tsp salt
• 1/4 tsp pepper
• oil
• cooking spray



Instructions:

This recipe takes about 55 minutes to make. Serves 6 to 8.

Drizzle some oil in a pan over medium heat.
Sauté onion, garlic, bell peppers, jalapeno pepper, and green onions for 2 to 3 minutes.
Add artichoke hearts, mushrooms, tomatoes, salt, and pepper and cook for 4 to 5 minutes.
Turn off heat and let the vegetables cool.
In a bowl, whisk egg and milk together.
Grease baking dish with cooking spray.
Spread grated cheese at the bottom of the dish.
Evenly spread sautéed vegetables on top of the cheese.
Gently pour the egg mixture into the dish.
Bake in the oven at 350°F for 45 minutes.
Let the egg bake rest before slicing.

Ideas And Tips:

• You can add anything you want to your egg bake, including potatoes, spinach, corn kernels. celery, carrots, broccoli, asparagus, zucchini, tuna or chicken chunks, sausages, deli meats or chopped seafood.

• You can add any chopped fresh herbs to the egg mixture.

• You can also put slices of bread at the bottoms of the baking dish before putting shredded cheese. This will make your egg bake more filling.
