1. General Tso’s Style Tofu

Ingredients:

• Diced tofu
• 2 tbsp of soy sauce
• 2 tbsp of maple syrup
• 1/2 tsp of sriracha or hot sauce
• 1/2 tbsp of ketchup
• 1/4 tsp of garlic powder
• 1/4 tsp of ground ginger
• Cornstarch or flour
• Frozen mixed vegetables
• Steamed rice

Instructions:

This recipe takes about 15 to 20 minutes to make. Serves 1.

Cook rice according to package instructions.
In a pan over medium heat, fry up the tofu.
Add your vegetables.
In a small bowl, prepare your sauce. Add soy sauce, maple syrup, ketchup, sriracha, garlic powder, and found ginger.
Mix well with a spoon.
Sprinkle some flour or cornstarch to the vegetables to lightly thicken it.
Add your sauce and stir gently.
Serve over steamed rice and garnish with sesame seeds.

2. Oreo Cheesecake Cookies

Ingredients:

• 1/2 cup of vegan cream cheese
• 1/2 cup of softened vegan butter
• 3/4 cup of sugar
• 1 cup of flour
• 5 Oreo cookies

Instructions:

This recipe takes about to make. Makes 15 cookies.

Preheat oven to 150F.
In a big bowl, add cream cheese, butter, and sugar. Mix together with a spoon until it becomes fluffy.
Add flour and keep stirring.
Break apart some Oreo cookies and add into the mixture.
In a baking sheet, place a spoonful of dough.
Bake in the oven for 15 to 20 minutes.

3. One Pot Curry Noodles

Ingredients:

• 3 oz of rice noodles
• 1 cup of water
• 1 tbsp of curry powder
• 1 tbsp of nut butter or almond butter
• 1 tbsp of soy sauce
• 2 tbsp of maple syrup
• Lemon juice
• Frozen mixed vegetables

Instructions:

This recipe takes about 10 minutes to make. Serves 1.

Place a pot over medium heat.
Add rice noodles and the rest of the ingredients.
Push down the ingredients so that all of them are submerged in the water.
Cover with a lid and let it simmer for 10 minutes.
Once the liquid has evaporated, it is ready to serve.

• Oreo cookies are not vegan and contain dairy ingredients. You can substitute with any cookie you want. You can also use cacao nibs, chocolate chips, or peanut butter.

• For the one-pot curry noodles, you can use any flavors, seasoning, or herbs you want. You don’t have to use curry if you’re not a fan. You can make your own mix of herbs.
