Egg Masala Curry Recipe

Egg masala curry originated from India that consists of boiled eggs, fried onions, chopped tomatoes, and a mixture of flavorful spices. Garam masala powder is what makes this dish complete. It enhances the taste and savor of the entire egg masala curry. This recipe takes about 40 minutes and serves 3-4.

Ingredients:

• 4 eggs (boiled and cut into halves)
• 2 medium onions (fried)
• 1 1/2 teaspoon ginger garlic paste
• 1 medium tomato (chopped)
• 4 tbsp whisked curd/yogurt
• 3 green cardamom
• 3 cloves
• 2 pcs cinnamon
• 1 teaspoon red chili powder
• 1 teaspoon coriander powder
• 1/2 teaspoon cumin powder
• 1/2 teaspoon Garam Masala powder
• 1/2 teaspoon dry fenugreek leaves (Kasuri Methi)
• 3/4 teaspoon salt
• Oil for frying
• 150 ml water

Instructions:

Put fried onion in a blender and coarse grind.
Set aside.

Set a pan/Kadai over low heat.
Put 2 tbsp oil and let it heat.
Add cloves, green cardamom, and cinnamon.
Stir for a while and once it splutters add ginger garlic paste.
Fry for 2 minutes.
Add chopped tomatoes and 1/2 teaspoon salt to taste.
Increase to medium heat and let it cook for 2 minutes.
Season with red chili powder, coriander powder, and cumin powder.
Reduce to low heat.
Mix and cook for 2-3 minutes.
Switch off heat or reduce to low.
Add whisked curd/yogurt and stir continuously for 2-3 minutes until the oil separates.
Add crushed fried onion that was set aside earlier.
Mix and cook for 2 minutes until oil separates.
Add garam masala powder and cook for another minute.
Pour water and let it simmer for 2 minutes still on low heat.
Add the boiled egg halves.
Make sure the yellow side is faced down.
Let it cook for 2 minutes.
Flip on the other side and let it cook for another 2 minutes.
Sprinkle with Kasuri Methi powder on top of the eggs.
Gently mix and let it simmer for another 2 minutes.
Remove from heat and transfer to a plate.
Serve and enjoy!

Tips and ideas:

Don’t over boil your egg. This dish is best prepared with hard-boiled egg.

You can add seasonings if you need to for a spicier and tastier flavor.
