Fully Raw Burrito Recipe

Burrito is a traditional food in Mexico. This dish is said to have been invented in the city of Juarez. It is a rolled flour tortilla filled with meat, rice, beans and perhaps other ingredients. When a burrito is fried it becomes a chimichanga.

This fully raw burrito recipe uses raw vegetables to a much healthier burrito. Instead of a flour tortilla, a large collard leaf is used as the wrap. What makes this burrito delicious is the “awesomesauce” generously spread on one side of the leaf, which is then topped with layers of vibrant fresh vegetables and herbs.

Ingredients:

This recipe takes about 10 minutes to make. Serves 2.

• 2 large collard leaves
• 1 large bell pepper, cut into strips
• 1 large bell pepper, diced
• ½ cup of alfalfa sprouts
• 1 big beef tomato, cut into strips
• 2 to 3 cherry tomatoes, diced
• 1 red onion, cut into strips
• ½ cup of cilantro, roughly chopped
• 2 carrots, shredded
• 1 cucumber, diced
• a quarter of an avocado, sliced
• ½ cup of arugula leaves, roughly chopped

Sauce:

• 2 to 3 leaves of green onions, sliced
• juice of 3 lemons
• ¼ cup of sesame seeds
• 1 tsp of cumin
• half of a zucchini, diced
• habanero or spicy peppers (optional)

Instructions:

To make the sauce, throw in all the ingredients in a blender. Blend until you get that smooth consistency.
Take your collard leaf and slice off the thick part of the stem at the back of the leaf. This will make it easier for you to roll the leaf.
Lay your leaf on a flat surface or chopping board and evenly spread a generous amount of sauce on the back of the leaf.
Layer your vegetables on top of the sauce, finishing off with the avocado slices, alfalfa sprouts, and chopped herbs.
You may pour more sauce on top.
Fold the sides of the leaf in and roll making sure that your fingers push the filling in while rolling to make a neat wrap.
Gently flip over the burrito on a plate.
Slice in half.
Take a big bite of your yummy and healthy burrito. 🙂

Ideas And Tips:

• If you find it difficult to get collard greens in your area, you may use whatever large-leafed vegetable is available – lettuce leaves, perilla leaves, cabbage, swiss chard or kale.

• For the filling, you may also add fresh fruit slices like mangoes, apples, pineapples, peaches, or oranges.

• Instead of adding more sauce to the filling before wrapping, you may just serve it on the side so your burrito does not become too soggy.
