Green Tea Cupcakes (Matcha Cupcakes)

Matcha food has taken over the world. Everything from drinks to pastries now has a matcha variety. These green tea cupcakes will surely satisfy your matcha cravings. Topped off with creamy lemon buttercream, these cupcakes give you a refreshing taste perfect with tea or coffee.

Ingredients:

• 1.5 cups of all-purpose flour
• 1 cup of sugar
• 1.5 tsp of baking powder
• Half a tsp of salt
• 1 tbsp of matcha powder
• Half a cup of unsalted butter, cut into 1-inch cubes
• 2 large eggs
• Half a cup of milk
• Half a tsp of vanilla extract

Lemon Buttercream Frosting:

• Half a cup of butter
• 2 tbsp of lemon zest
• 3 cups of icing sugar
• 3 tbsp of lemon juice
• 2 tbsp of milk

Instructions:

This recipe takes about 40 minutes to make.

Preheat the oven to 350F.
In a mixer, add all of the dry ingredients and stir until mixed well.
Add cubes of butter one at a time. Mix until texture becomes crumbly.
In a bowl, mix milk, vanilla extract, and eggs. Whisk together and then add to the mixer with the dry ingredients.
Scrape the bottom of the mixer to make sure everything is well incorporated.
Scoop the batter into the cupcake tins.
Bake in the oven for 18 to 20 minutes.
Let them cool on a cooling rack.
To make the buttercream frosting, cream the butter in the mixer.
Slowly add the icing sugar and lemon juice. Scrape the bottom of the mixer in between adding the ingredients.
Once all the icing sugar has been added, sprinkle the lemon zest into the mix.
Place the frosting in a piping bag and decorate the cupcakes.
Garnish with lemon zest.

• Use a toothpick to check on your cupcakes. If the toothpick comes out clean, they are ready. If the batter sticks to the toothpick, let them bake for a few more minutes.

• If the buttercream frosting is too thick, add a little bit of milk until the texture becomes soft and creamy.
