Grilled Shrimp & Calamari Salad – Laura Vitale

Grilled shrimp and calamari salad is a refreshing appetizer to serve that will kickstart your weekday meal. From the fresh seafood to the colorful veggies, you will truly love the healthy and delicious salad.

Ingredients:

• 1/4 lb Calamari (cleaned)
• 3/4 lb fresh shrimp (peeled and deveined)
• 1 tbsp thyme (freshly chopped)
• 1 tbsp parsley (chopped)
• 2 garlic cloves (minced)
• 5 oz baby arugula (washed and dried)
• 1 large roasted pepper (from a jar is acceptable)
• 1 fennel bulb (thinly sliced)
• 1 lemon
• 2 tbsp freshly squeezed orange juice
• 3 tbsp olive oil
• Salt and ground pepper

Instructions:

This recipe takes about 15 minutes. Serves 4-5.

Set a grill pan and preheat over high heat.

Mix parsley, thyme, and garlic in a bowl.
Add lemon zest and juice.
Season with salt and pepper.
Add some olive oil.
Put the calamari and shrimps.
Mix well until coated very well.
Set aside for 5 minutes to marinate.

Place the marinated calamari and shrimps on the grill pan.
Let it grill for a minute or 2 on each side.
Transfer to a plate.
Set aside.

Mix baby arugula, fennel, and roasted pepper in a separate large bowl.
Whisk lightly freshly squeezed orange juice, some olive oil, salt, and ground pepper.
Pour most of it into the arugula salad mixture.
Mix well.
Place on a platter.
Arrange the grilled calamari and shrimps in the salad.
Add the remaining orange juice.
Serve and enjoy!
