Grilled Veggie Panini Recipe

Panini is a grilled sandwich that is usually filled with deli and cheese. The term “panini” is a Italian word that translates to “small bread”. The bread is grilled so it is crunchy and has grill marks. Nowadays, there are panini press available specifically to grill these sandwiches.

This recipe is filled with grilled vegetables and fresh mozzarella. Easy to make, healthy, and surprisingly tasty. Use different types of vegetables depending on what you have on hand.

Ingredients:

• 1 small eggplant
• 1 zucchini
• 2 portobello mushrooms
• 2 roasted bell peppers
• 8 oz of fresh mozzarella
• Extra virgin olive oil
• 1 tbsp of balsamic vinegar
• 1/4 cup of pesto
• 4 slices of sourdough bread
• Salt
• Pepper

Instructions:

This recipe takes about 15 to 20 minutes to make. Serves 4.

Preheat grill pan over medium-high heat.
Chop your vegetables and drizzle with oil.
Grill the vegetables. Cooking time depends on how thick your slices are.
When the vegetables become tender and show grill marks, remove from the grill pan.
Slice bread. Spread pesto on one side.
Add mozzarella on top of pesto. Layer your vegetables and top off with another layer of mozzarella.
Drizzle oil on another slice of bread and place on top of the sandwich (oil side up).
Place in a panini press or grill pan until mozzarella has melted and grill marks appear on bread.
Slice panini and serve.

Ideas And Tips:

• If you don’t have a panini press, you can grill the sandwich back in the grill pan or in a frying pan. This step is just to make the bread crunchy and to melt the mozzarella.

• For 100% vegan panini, you can remove the mozzarella and just have vegetables in your panini.
