Healthy Carrot Cake Recipe | Easy and Healthy Dessert Recipe

Carrots are a good source of nutrients that may help with clear skin, boosting the immune system and reducing high blood pressure. They are also a weight-loss-friendly food beneficial in maintaining good digestion. This healthy carrot cake is a delicious dessert you can serve to everyone. Its sweetness is a mix of pure maple syrup and pure vanilla extract. This recipe takes about 20 minutes to prepare and 45 to bake.

Ingredients:

Batter:

• 1 cup almond milk (unsweetened)
• 1 tbsp apple cider vinegar
• 2 eggs
• 1/2 cup apple sauce (unsweetened)
• 1/2 cup coconut sugar
• 1/4 cup avocado oil
• 1/4 cup pure maple syrup
• 1 tsp pure vanilla extract
• 1.5 cups spelt flour
• 1/2 cup almond flour
• 1 tsp cinnamon
• 1/2 tsp ground ginger
• 1/4 tsp ground nutmeg
• 1/4 tsp sea salt
• 1 tsp baking soda
• 1.5 cups carrots (grated)

Frosting:

• 1/4 cup skyr or Greek yogurt
• 3/4 cup cream cheese
• 2 tbsp raw honey

• chopped walnuts (for garnishing)

Instructions:

Preheat oven to 350 F.

Prepare a mixing bowl.
Pour unsweetened almond milk.
Add apple cider vinegar.
Whisk to combine.
Set aside.

Prepare another mixing bowl.
Crack open two eggs.
Add unsweetened apple sauce, coconut sugar and avocado oil.
Drizzle with pure maple syrup and pure vanilla extract.
Add the milk mixture into the bowl.
Whisk to combine.
Sift through spelt flour, almond flour, cinnamon, ground ginger, ground nutmeg, sea salt and baking soda.
Whisk to combine.
Add the grated carrots.
Mix well.
Transfer to a lightly greased, parchment-lined 9 x 9-inch baking dish.
Spread to distribute evenly.
Place it inside the preheated oven.
Let it bake for 40-45 minutes.
Once done, remove the carrot cake from the oven and let it cool.

Frosting:

Meanwhile, prepare another mixing bowl.
Add skyr yogurt and cream cheese.
Season with raw honey and pure vanilla extract.
Whisk using an electric handheld mixer.
Continue to whisk until stiff peaks form.

Assembly:

Spread the frosting on top of the carrot cake.
Garnish with chopped walnuts.
Cut the cake into equal slices.
Serve and enjoy!
