The only time-consuming part of making almond milk is the soaking process. The key is to soak the almonds before going to bed so you don’t have to wait, then you’ll be ready to make the almond milk the next morning. This fresh almond milk recipe is flavored with vanilla extract, Medjool dates, and salt. Use it in anything that calls for regular milk.

Ingredients:

• 1 cup of raw organic almond
• 4 cups of water
• 1 tsp vanilla extract
• 1 pitted Medjool date
• ⅛ tsp salt

Instructions:

This recipe takes about 10 to 15 minutes to make. The almonds need to soak in water for at least 8 hours. Serves 1 liter of milk.

Soak almonds in water for at least 8 hours.
Drain and rinse almonds.
Place almonds in a blender.
Add water, vanilla extract, date, and salt.
Blend on high speed for 2 minutes.
Line a fine mesh strainer with cheesecloth.
Place the strainer on top of a large measuring cup or pitcher.
Slowly pour the milk into the strainer.
Grab all the sides of the cheesecloth and give it a good squeeze.

• The milk can store in the fridge for 5 days. Make sure you put it in an airtight container.

• You can dry the almond pulp and pulse in your food processor to make almond flour which can be used in baking or to make almond butter. You can also toast almond pulp and top it on oatmeal, yogurt or as a light snack.
