How To Make Chicken Burritos

Make yummy snacks in the afternoon or evening by preparing chicken burritos. The filling for this “special burrito” is seasoned chicken mixed in refried beans sauce. Add other fillings to your preference like corn, cheese, and coriander / cilantro for a more flavorful burrito snack.

Ingredients:

• 1/4 tsp black pepper
• 3/4 tsp cayenne pepper
• 1 tsp onion powder
• 1 tsp dried oregano
• 1 tsp salt
• 2 tsp dried cumin powder
• 2 tsp paprika
• 5 flour tortillas
• 600 grams chicken breast
• 1/2 onion (chopped)
• 1 red bell pepper (diced)
• 2 cloves garlic (finely minced)
• 400 grams can of refried beans
• 2 tbsp olive oil (divided)
• 1/4 cup water
• 2 1/2 cups Mexican red rice
• 400 grams can of corn (optional for additional filling)
• grated cheese (optional for added filling)
• chopped cilantro (optional for garnishing)

Instructions:

In a bowl, add seasonings – cayenne pepper, paprika, dried cumin powder, dried oregano, and onion powder.
Mix well and set aside.

Place chicken breast in another bowl.
Drizzle olive oil.
Toss until chicken is well coated.
Add the spices mix.
Mix well.
Fry in a pan until both sides are golden brown.
Once fried, transfer to a plate and let it rest for a minute.
Chop into bite-sized cubes.
Set aside.

In the same pan, saute finely minced garlic and chopped onion until onion is soft.
Add diced red bell pepper.
Stir and cook until tender.
Add refried beans and water.
Stir and cook.
Add the chopped cooked chicken.
Mix well and let it cook until sauce thickens.
Remove pan from the heat and let it cool.

Warm flour tortillas in a microwave for 1-2 minutes.
Lay a flour tortilla on a plate.
Add a spoonful of Mexican red rice on the lower space of the tortilla.
Top it off with a spoonful of chicken filling.
Add fillings of your choice like corn and grated cheese.
Garnish with chopped cilantro.
Fold the tortilla to make a burrito.
Wrap in a foil and heat in the oven for 10 minutes at 180 F.
Slice in half and enjoy!
