Lava cake is also known as molten chocolate cake. It is a popular dessert that has liquid chocolate oozing out of the cake when you slice into it. This recipe takes that popular dessert into a new magical level. A chocolate disc is placed on top of the cake. Warm chocolate ganache is poured over the disc which causes it to melt and “drop” into the center of the cake. Decadent, warm, and moist, this dessert is the perfect way to end a meal.

Chocolate Disc
• 140 grams of tempered chocolate

Chocolate Brownie Base
• 300 grams of melted butter or margarine
• 6 eggs
• 3 cups of sugar
• 1 tsp of vanilla essence
• Dash of marsala
• 3/4 cup of cocoa powder
• 360 grams of plain flour
• 2 tsp of baking powder

• 200 grams of milk chocolate
• 80 grams of dark chocolate
• 100 ml of cream

This recipe takes about 25 to 30 minutes to make. Servings depend on how big you cut your brownies.

Preheat oven to 356F.
Place baking paper on a baking tin.
Melt butter.
Beat eggs and whisk together with sugar, cocoa, flour, baking powder, and melted butter.
Drizzle with vanilla essence and marsala.
Pour the batter on the baking tin.
Garnish with nuts or chopped chocolate.
Bake in the oven for 20 to 25 minutes. Pierce the brownie using a knife to see if it is cooked.
To make the ganache, melt chocolate and then add cream. Whisk together until chocolate is shiny and smooth.
Once brownie is cooked, cut into circles.
Cut another circle in the middle.
Place the brownie on a plate.
Add the chocolate disc on top.
Pour the warm ganache on the disc when serving.
Garnish with a scoop of ice cream.

Ideas and Tips:

• For that flowing lava effect, put some ganache inside the brownie before placing the disc on top.
