Orange Cake Recipe – Gluten Free!

Orange cake is a classic Mediterranean, Moroccan and Middle Eastern Passover dessert. In this recipe, whole oranges are boiled to remove the bitterness. The oranges are then pureed, then mixed with almond meal, eggs, sugar, and gluten-free baking powder. Not only is this cake incredibly rich and moist, it is also gluten and dairy-free. The cake is finished with a sweet and citrusy orange syrup. This cake is also perfect with a cup of tea or coffee.

Ingredients:

Cake:

2 oranges
3 eggs
1 cup caster sugar
3 cups almond meal
1 teaspoon gluten-free baking powder

Orange Syrup:

juice of 1 orange
zest of one orange
3/4 cup caster sugar

Instructions:

This recipe takes about 1 hour and 45 minutes to make. Serves 1 cake.

Preheat oven to 170°C.
Put oranges in a saucepan.
Pour 2 to 3 cups of water into the pan.
Boil over medium heat for 15 minutes.
Drain the liquid and put the oranges back into the pan.
Pour 2 to 3 cups of water into the pan.
Boil over medium heat for another 15 minutes.
Make the orange syrup while the oranges are boiling.
Put orange juice, orange zest, and caster sugar in a saucepan.
Simmer over low heat while stirring constantly until the sugar is completely dissolved.
Turn off heat and set aside.
Drain the oranges and cut each orange into 8 pieces, then remove the seeds.
Put the oranges in a food processor or blender.
Blend until pureed.
Put caster sugar and eggs in a large bowl.
Using a hand mixer, whisk until well combined.
Add orange puree to the egg mixture.
In a separate bowl, mix together almond meal and baking powder.
Add dry ingredients to the egg mixture.
Mix the ingredients just until well combined.
Pour cake batter into an inch cake pan lined with parchment paper.
Bake in the oven 170°C for 1 hour.
Remove the cake from the pan, then transfer to a serving dish.
Using a bamboo skewer, pierce holes on top of the cake.
Pour orange syrup on top.
Slice and serve.

• If you want a vegan cake, you can replace the eggs with ¾ cup of applesauce.

• Boiling the oranges removes the bitterness from the rind.
