Breakfast is, so they say, the most important meal of the day. Prepare a meal that is easy to make and delicious to start your day right. Potato omelette will surely be enjoyed by you and your kids. This recipe takes less than 15 minutes.

Ingredients:

For the potatoes:
• 2 medium-sized potatoes (thinly cut into pieces)
• 2 tbsp oil
• 2 tbsp onion (chopped)
• 1/8 tsp chili powder
• 1/8 tsp turmeric powder
• Salt to taste

For the omelette:
• 2 eggs
• Salt to taste
• 1 tbsp coriander
• 2 pieces green chili (chopped)
• 1 tsp chili flake
• 1 tsp oil

Instructions:

For the potatoes:
Thinly cut into pieces 2 medium-sized potatoes.
Put in a bowl and wash with cold water.

Set a frying pan over medium flame.
Add 2 tbsp oil and heat it.
Saute chopped onions for 2 minutes.
Add the potato pieces.
Stir and cook for 3-5 minutes.
Add seasonings – 1/8 tsp chili powder, 1/8 tsp turmeric powder, and salt to taste.
Saute and mix until well combined for 7-8 minutes.
Remove from heat.
Set aside.

For the omelette:
In a mixing bowl, add 2 eggs, 1 tbsp coriander, 2 chopped green chili, 1 tsp chili flake, and salt to taste.
Mix until well combined.
Add cooked potatoes.
Mix well.

Set a frying pan over medium heat.
Heat 1 tsp oil.
Add the egg and potato mixture.
Spread evenly and cook both sides very well.
Remove from heat and transfer potato omelette to a plate.
Serve as it is or cut into portions.

Serve with a variety of sauces or dips.

You can exclude chili flakes and chili powder if your kids are not fond of it. You can cook a separate potato omelette for them.

Prepare fresh fruit juice, smoothie, or milk.
