Raw Food Recipes: Berries In Cashew Cream

Cashew cream is made from blended cashews mixed with spices, milk or water. It can be used for desserts, soups, pasta, casseroles, pies, and puddings. In this recipe, cashew cream is poured over a mix of strawberries and blueberries. It adds a creamy and sweet flavor to the fruits. You can use other types of fruits to go with this cream. A raw diet does not mean you need to give up your love of desserts.

This recipe can be your breakfast as well because berries are rich in antioxidants. You can also use this cream as a dipping sauce for vegetables.

Ingredients:

• 1 cup of cashews
• 4 dates
• Vanilla extract
• Cinnamon
• Water
• Mixed berries

Instructions:

This recipe takes about 5 minutes to make. Serves 2.

Place cashews, dates, vanilla extract, cinnamon, and water in a blender.
Blend until smooth and creamy.
Put mixed berries in bowls.
Pour cashew sauce on top.

• The cashew nut comes from a fruit-bearing tree that is originally native to northeastern Brazil. The term cashew derives from the Portuguese name of the tree “caju” which means “nut that produces itself”. Cashew trees grow in tropical regions and they are sensitive to frost. Cashews are rich in fiber, carbohydrates, iron and numerous vitamins. These nuts are used for cooking, making oil and butter, and alcoholic beverages. In traditional Mayan medicine, the leaves and bark of the cashew tree were used to treat diarrhea by turning them into tea.

• If the mixture is too thick, add more water.

• You can also use soy or almond milk instead of water.

• For a sweeter sauce, you can add honey, agave, or maple syrup.
