Raw Mediterranean Tabouli

Tabouli is a Mediterranean vegetarian dish. It is a popular dish eaten like a salad in both the Mediterranean countries as well as Middle Eastern countries. In Arabic, its name translates to “seasoning” or “dip”. It is traditionally made out of tomatoes, parsley, mint, bulgur, and onion. Typically garnished with olive oil, lemon juice, and salt. This is a raw version of that dish.

This recipe takes about 10 minutes to put together, and marinate for at least 30 minutes in the fridge. Serves 5 to 7.

Ingredients:

• 4 to 5 heads of curly parsley
• 4to 5 heads of Italian parsley
• 3 to 4 big tomatoes
• 1 head of cauliflower
• 7 green onions
• Juice of 5 lemons
• Salt
• Pepper
• Olive oil

Instructions:

Chop the parsley, tomatoes, and onions very finely.
Roughly chop the cauliflower, and then place in a food processor. Pulse until cauliflower turns into small crumbly pieces.
In a large bowl, add parsley, tomatoes, and onion.
Sprinkle cauliflower. Mix well.
Drizzle with lemon juice.
Season with salt and pepper to taste.

Ideas And Tips:

• You can also drizzle olive oil to the tabouli for added flavor.

• Let the tabouli sit in the fridge for at least 30 minutes. The longer it sits in the fridge, the more delicious it becomes.

• This dish is best served with grilled fish or meat. You can also use it as a dip. Another variation is to use it as filling for pita bread.

• Traditional tabouli has hummus. You can substitute by grinding up chickpeas mixed with olive oil. This will add a hearty flavor to your tabouli.
