Savoury Muffins – Pizza Muffins Recipe

Have you tried savoury pizza muffins? This snack or appetizer is a good way to start your weeknight house party. Having the same flavors as the all-time favorite pizza, this tasty finger food will be enjoyed by both kids and adults.
This recipe takes about 40 minutes.

Ingredients:

For the batter:
• 1 cup all-purpose flour (sifted)
• 1 teaspoon baking powder
• 1/4 teaspoon baking soda
• 1 teaspoon salt
• 1/2 teaspoon garlic powder
• 1/2 teaspoon mixed Italian herbs
• 1/2 teaspoon red chili flakes
• 2 tbsp oil
• 2 tbsp yogurt
• 2 tbsp pizza sauce
• 1/3 cup red, green, and yellow bell peppers (chopped)
• 1/4 cup sweet corn
• 2 tbsp onion (chopped)
• 1/3 cup sausage or pepperoni (chopped)
• 1/2 cup mozzarella cheese (shredded)
• 3 tbsp water

For the pizza muffin:
• 6 teaspoons pizza sauce
• 1 tbsp Mozzarella cheese (shredded)
• Bell pepper (chopped)
• Mixed Italian herbs to taste
• Red chili flakes

Instructions:

For the batter:
Put the all-purpose flour, baking powder, and baking soda in a large mixing bowl.
Season with salt, garlic powder, mixed Italian herbs, and red chili flakes.
Mix until well combined.
Add oil, yogurt, and pizza sauce.
Add red, green, and yellow bell peppers (you can use one color if you like).
Add sweet corn, onion, and sausage.
Sprinkle shredded mozzarella cheese.
Add water.
Mix all ingredients until well combined.
Set aside for 5-10 minutes.

For the pizza muffin:
Preheat oven to 190 C for 10 minutes.

Lightly grease a muffin tray with oil.
Fill each muffin tray with 3/4 of the batter.
Spread 1 teaspoon of pizza sauce on each muffin.
Put mozzarella cheese on top.
Add some bits of chopped bell pepper.
Top it off with mixed Italian herbs and red chili flakes.
Put the tray inside the oven.
Let it bake for 20 minutes.
Once done, let it cool for at least 5 minutes before completely removing.
Transfer to a plate.
Serve and enjoy!
