Spinach Lasagne

Known as a festive dish, lasagne is made with layers of pasta sheets, meat, sauce, and cheese. With this recipe, you can enjoy an oil-free, meat-free, dairy-free baked lasagna as this recipe does not use any meat, oil, butter or dairy. The creamy filling is made with spinach, tomato sauce, and tofu while the béchamel or white sauce is made with oat milk thickened by cornstarch. If you are having a party at home and you want to serve your family and friends a healthy yet delicious dish, then make this Spinach lasagne.

Ingredients:

• 8 cooked lasagna sheets
• vegan cheese

Béchamel Sauce:

• 1 ¾ cups of oat milk
• 0.7 oz cornstarch
• ¼ tsp black pepper
• ¼ tsp nutmeg
• 1 tsp salt

Filling:

• 9.5 oz silken tofu
• 6 tbsp tomato sauce
• 1½ tsp miso paste
• 6 tbsp béchamel sauce
• ¼ tsp paprika
• 9.5 oz pack of cooked spinach, drained well
• ¼ tsp salt

Instructions:

This recipe takes about 35 to 40 minutes to make. Serves 4 to 6.

To make the béchamel sauce, put oat milk, cornstarch, black pepper, nutmeg, and salt in a saucepan.
Mix well, then simmer over low heat while stirring constantly for about 12 to 15 minutes.
Turn off heat and set aside.
To make the filling, finely chop the drained spinach.
In a large mixing bowl, mash tofu using a spatula until you get a ricotta-like consistency.
Add tomato sauce, miso paste, béchamel sauce, paprika, salt, and spinach.
Mix until all the ingredients are well-combined.
To build the lasagne, spread some béchamel sauce and spinach filling on the bottom of a 9-inch baking dish.
Lay 2 lasagna sheets on top, then spread 1/4 of the spinach filling.
Continue building the lasagne with alternate layers of lasagna sheets and spinach filling. The last layer should be the filling.
Drizzle some more béchamel sauce, then top off with some vegan cheese.
Bake in the oven at 450°F for 15 minutes.
Let the lasagna cool for 5 to 10 minutes before slicing and serving.

• You may store the baked lasagne in the fridge for up to 2 days.

• You may use other non-dairy milk such as soy milk, almond milk, rice milk or hemp milk.
