Ingredients:

• 4 oz. tilapia (or any fish you’d like)
• Asparagus
• Lemons, sliced
• Lemon juice
• Fish seasoning
• Pepper
• nonstick spray (optional)

Instructions:

Preheat oven to 375 degrees.

Wash the asparagus and let it drain.

Prepare the foil. Use one piece of foil per fish. About 12-14 inches in length. Place the fish on the foil.

Add a generous amount of lemon juice. Sprinkle fish seasoning on top. Add pepper to taste and couple lemon slices.

Add the asparagus; about 4-6 stalks.

Fold into foil down from the top leaving air for steaming.

Repeat the same procedure for the remaining fish.

Place each foil on a cookie sheet and bake for 14-15 min.

After 15 minutes, check the fish if it’s nicely done without any clear parts in it.

Easy Oven Roasted Vegetables

Oven roasted vegetables is a classic recipe that is enjoyed around the globe. Ingredients:

Vegetables:

• 1 parsnip
• 3 medium-sized potatoes
• 1 stalk of broccoli
• 1 onion

Seasoning:

• Dried Thyme
• Olive oil
• Pepper
• Salt

Instructions:

Cut the vegetables.

Start by chopping the vegetables into small cubes of the same size. Start with the potatoes. Cut the potatoes into cubes without peeling them. Do the same with the carrots. Remove the skin of the parsnip with a peeler and cut the same way with the carrot.

Peel the onion and cut it into larger pieces than the vegetables. It’s soft and tends to cook faster compared to the vegetables.

Remove the stalk of the broccoli and cut its florets. Only the florets will be included in this recipe. Cut the broccoli larger than the cubed vegetables. It tends to burn quite fast!

Take a baking tray covered with baking paper and spread the veggies on there.

Drizzle the vegetables with olive oil.

Season with pepper, salt, and dried thyme.

Mix the vegetables until everything is coated with olive oil and seasoning.

Place the tray in the oven for about 30 minutes at 200°C.

Check the veggies from time to time, 20-30 minutes later and they’re done.

Quick And Easy Salmon Patties

One of the best canned goods that you can store in your pantry is canned salmon. It’s very versatile and can be used as ingredient in many healthy recipes. • 1 7.5 ounce can red salmon, drained
• 1/4 cup finely diced onion
• 1/4 cup finely diced red pepper
• 1 Tablespoon chopped fresh parsley
• 1 egg
• 1/2 cup fresh whole wheat bread crumbs
• 1 teaspoon olive oil for frying

Instructions:

Place drained salmon in a bowl and mash with a fork. Be sure to remove the skin of the canned salmon. You can leave the bones as these contain calcium.

Mix with onion, red pepper, parsley, egg, and crumbs. Make your own fresh crumbs from a slice of whole wheat. Choose whole wheat bread that’s soft for this recipe. It will give the recipe extra fiber. Remove the crust and make some crumbs with a mini food processor. If you don’t have one, you can just chop the bread really fine with a knife.

Shape into four patties.

Heat oil in a pan over medium heat and cook patties for about 5 minutes until browned and cooked through, turning once.
