Vegan Burgers From Scratch To Freeze In Bulk

Frozen vegan burger patties can be expensive. With this recipe, you can make your own vegan patties from a combination of vegetables, nuts, seeds, and beans. You can freeze the patties, then just thaw them before frying. We believe you will find that these vegan burger patties are better than any frozen vegan patties on the market.

Ingredients:


• 2 cups of dried mixed beans, soaked overnight
• 2 cups of grated carrots
• 4 cups of grated zucchini
• 1 onion, finely chopped
• 2 heads of garlic, minced
• 2 tbsp olive oil
• 2 whole wheat bread slices, torn into smaller pieces
• 2 cups of edamame
• 1 cup of pecan nuts
• 1 cup sunflower seeds
• 1 cup of walnuts
• 1 cup of almond butter
• 1 ½ cup quick cooking oats
• 2 tbsp Old Bay seasoning
• 1 tbsp molasses
• ½ tbsp freshly cracked black pepper
• 1 tbsp olive oil
• bread rolls
• vegan mayonnaise
• mustard
• lettuce
• tomato slices

Instructions:

This recipe takes about 1 hour and 30 minutes to make. Serves 21 large patties.

Drain soaked mixed beans and place them in a large pan.
Add enough water to cover the mixed beans.
Cook over medium heat for an hour.
Drain cooked beans and put them in a food processor.
Pulse until smooth, then set aside.
In a large mixing bowl,
Heat olive oil in a large pan.
Sauté onions, zucchini, onions, and garlic for 1 minute.
Cover the pan with a lid and cook over medium-high heat for 3 minutes.
Take the lid off and add bread into the liquid in the pan.
Add edamame and stir.
Turn off heat and set vegetable mixture aside.
Put pecan nuts, sunflower seeds, walnuts, and almond butter in a food processor.
Process until smooth.
Put vegetable mixture in a large mixing bowl.
Add oats, Old Bay seasoning, pepper, and molasses, then mix well.
Add beans, nuts, and seeds, then mix well.
Form into large burger patties.
Heat olive oil in a pan over medium-high heat.
Fry vegan patty for 2 to 3 minutes on each side or until golden brown.
To build the vegan burger, spread vegan mayonnaise on top half of the bread roll.
Spread mustard on the bottom half of the bread roll.
Put tomato slices and lettuce on top.
Put the vegan patty, then cover with the top half of the roll.

Ideas And Tips:



• If you are storing the patties, place each patty in a zip-lock bag or plastic wrap. These vegan patties can store in the freezer for up to 3 months. Be sure to thaw the patties completely before frying.
