Vegan Carrot Cake Recipe

Carrots are a good source of antioxidants, fiber, potassium, vitamin K1, and beta carotene. They are believed to be a food good for weight loss. This vegan carrot cake is a perfect dessert for any time of the day. It only takes a few ingredients you can find in your kitchen, a little mixing, and baking.

Ingredients:

• 6 medium carrots (grated)
• 2 1/2 cups self-rising flour
• 1 1/3 cup white sugar
• 3/4 cup applesauce
• 1/2 teaspoon cinnamon
• 1/2 cup vegetable oil
• 1/4 teaspoon cloves
• 1/4 teaspoon nutmeg
• 1/4 cup brown sugar

Instructions:

This recipe takes about 1 hour. Serves 4-6.

Preheat oven to 350 F.

In a mixing bowl, add flour, nutmeg, cloves, and cinnamon.
Whisk together.
Add grated carrots.
Mix well until the carrots are coated.

In a separate bowl, put brown sugar, white sugar, vinegar, applesauce, and vegetable oil.
Mix well.
Add the carrots mixture.
Mix all the ingredients, recommended to use an electric mixer.
Transfer the mixture to a greased and lined baking dish.
Bake for 45-50 minutes.
Serve and enjoy.

You can put vegan icing on top of the vegan carrot cake or you can serve it alone.
