Vegan Curry Recipe

This recipe uses okra as the main ingredient to create a gluten-free vegan curry. The blend of spices makes this dish really tasty. It is served on a bed of hummus then topped with toasted cashew nuts for that added crunch and spice to every bite.

Okra, which is also known as “lady’s fingers”, originated from Africa. It is widely used in Caribbean, Creole, Cajun and Indian cuisines. This ridged pod contains edible seeds which release a slimy fluid when chopped and cooked. This low-calorie, high fiber vegetable contains potassium, vitamins B and C, folic acid, and calcium.

Ingredients:

• 75 ml olive oil
• 1 red onion, thinly sliced
• 1 clove garlic, chopped
• 1 ginger, chopped
• 1 tsp ground coriander
• 1 tsp ground cumin
• 1 tsp ground fenugreek
• ¼ tsp salt
• ¼ tsp ground pepper
• 200 grams of fresh okra, cut into 1-inch pieces
• 1 cup of water
• 4 fresh tomatoes, quartered then seeded
• 1 bunch fresh coriander
• ½ cup of whole cashew nuts
• ¼ tsp salt
• ⅛ tsp cayenne pepper
• 1 tsp oil

Hummus:

• 400 grams of chickpeas
• 1 clove garlic
• 1 tsp cumin seeds
• juice of 1 lemon
• 75 ml grapeseed oil

Instructions:

This recipe takes about 20 minutes to make. Serves 2 to 3.





Drizzle olive oil in a pot.
Sauté onion, garlic, and ginger over medium heat for 1 minute.
Add ground coriander, ground cumin, ground fenugreek, salt, and ground pepper.
Sauté for another minute.
Add okra and continue to sauté for 1 minute.
Add water and let it cook for 5 minutes.
Add tomatoes and simmer for 2 minutes.
In a separate pan, toast cashew nuts with salt, cayenne pepper and olive oil for 3 to 4 minutes.
To make the hummus, place chickpeas, garlic, cumin seeds, lemon juice, and grapeseed oil in a food processor.
Blend until smooth.
Spread hummus on a shallow serving dish. Make a small well in the center to hold the veggies.
Stir in coriander leaves on the vegetables.
Spoon vegetables on the bed of the hummus.
Top with toasted spiced cashew nuts.

Ideas And Tips:

• Hummus is made from mashed chickpeas blended with oil, lemon, garlic, and salt. It is traditionally used as a spread or a dip but now, hummus is being used in a lot of tasty ways. You may also substitute hummus with mashed potato or quinoa for this dish.
