Vegan Recipe: Falafel Sliders

Falafel is a traditional Egyptian and Middle Eastern food. It is formed into balls that are deep-fried and served in a pita.

In this recipe, falafel is formed into sliders which is similar to a small burger. With vegan ingredients, these are perfect to serve as snacks to your friends and family. Kids will love these and not notice that there is no meat in them.

Ingredients:

Falafel Sliders:

• 1 can (15 oz) of chickpeas
• Half of a red onion
• 2 garlic cloves
• 5 sun-dried tomatoes
• Half a cup of fresh Italian parsley
• 1 tsp of ground cumin
• 1 tsp of ground coriander
• 1 tsp of salt
• Half a cup of garbanzo flour
• 2 tbsp of olive oil
• 14 mini buns
• 2 small tomatoes

Avocado Hummus:

• 1/4 cup of chickpeas
• 1 avocado
• 1/3 cup of fresh Italian parsley
• 1/4 cup of olive oil
• 1 garlic clove
• 1 tbsp of lemon juice
• 1/2 tsp of salt
• 1/4 tsp of cayenne

Tahini Sauce:

• Half a cup of tahini
• Half a cup of water
• 1 garlic clove
• 1 tsp of lemon juice
• Half a tsp of salt

Instructions:

This recipe takes about 10 to 15 minutes to make. Servings depend on your buns size. This recipe is good for 14 mini buns.

Rinse and drain the chickpeas. Set 1/4 of it for the avocado hummus.
Add these ingredients in the food processor: chickpeas, onion, garlic, tomatoes, parsley, cumin, coriander, salt and flour. Pulse 3 to 4 times until ingredients are mixed well.
Scrape the sides of the food processor and pulse 1 to 2 times.
Form patties by using your hands. Make sure the patties are the same size as your buns.
Place a skillet over medium-high heat and add some oil.
Cook the patties for 3 to 5 minutes on each side.
Place the cooked patties over paper towels to drain the oil.
To prepare the avocado hummus, add all of the ingredients together in a food processor and blend until smooth.
To make the tahini sauce, place all of the ingredients in a food processor and blend until smooth.
To assemble the sliders, layer the falafel slider, avocado hummus, and sliced tomato on the buns.

Ideas And Tips:

• You can make a big batch of falafel sliders and place it in the fridge until you are ready to cook them.

• You can also serve these with salad or with pita bread. You can also form these into bite-size balls and serve as appetizers.
