Vegan Recipes: How To Make Falafel

Falafel is a dish of small-ish deep-fried balls made from ground garbanzo beans and other ingredients. It is typically served with sliced tomatoes, cucumbers, and lettuce or used as a filling in pita pockets. You will also see falafel served with a dipping sauce on the side; this is hummus – also made with garbanzo beans. The name of the dish may sound complicated but it is really easy to make. Serve these healthy and light falafels to your friends coming over for movie night or a quick snack.

Ingredients:

• 1 pound of dry garbanzo beans
• 1 onion, quartered
• 1 potato, peeled and quartered
• 4 cloves garlic, minced
• ½ cup of chopped cilantro leaves
• 1 tsp ground coriander
• 1 tsp ground cumin
• 2 tsp salt
• ½ tsp ground black pepper
• ½ tsp cayenne pepper
• 2 tsp fresh lemon juice
• 1 tbsp olive oil
• 1 tbsp all-purpose flour
• 2 tsp baking soda
• 2 cups of canola oil

Instructions:

This recipe takes about 25 minutes to make. The garbanzo beans need to soak in water overnight. The falafel mix needs to be refrigerated for 2 hours. Serves 10.

Soak dry garbanzo beans in cold water overnight.
Rinse garbanzo beans with water and drain well.
Put garbanzo beans, onion, and potato in a food processor.
Pulse until ingredients are finely chopped.
Add garlic, chopped cilantro, coriander, cumin, salt, black pepper, cayenne pepper, lemon juice, all-purpose flour, and olive oil.
Pulse until the mixture resembles a coarse meal.
Transfer the falafel mix to a bowl.
Cover the bowl with a plastic wrap and place in the refrigerator for 2 hours.
Remove the falafel mix from the refrigerator and stir in baking soda.
Dampen your hands and form the falafel mixture into balls, about 1 1/2″ diameter each.
Preheat oil in a deep pot or skillet over medium-high heat until the temperature reaches 365°F.
Fry falafels in batches for 5 minutes per batch.
Make sure to turn them constantly to evenly cook the falafels.
Place the fried falafels on a plate lined with paper towel to drain excess oil.
Transfer falafels to a serving dish and squeeze lemon juice on top just before serving.

• On a budget or in a hurry, you can use canned garbanzo beans. You don’t need to soak them overnight. Just rinse and drain them before putting them in the food processor.

• You can also use sweet potato instead of potato.
