Ingredients:

• 9 oz Tortilla chips
• 1/2 cup Marinara sauce
• 2 cups shredded mozzarella cheese
• 1 cup sliced mushrooms
• Sliced green bell pepper
• 1 thinly sliced red onion
• 1 cup pepperoni slices
• 1 cup cooked and diced sausage

Instructions:

In a large skillet or pan, place half of the tortilla chips.
Top it off with half of the other ingredients – marinara sauce, shredded mozzarella cheese, sliced mushrooms, sliced bell pepper, thinly sliced red onion, pepperoni, and sausage slices.
Cover with the remaining tortilla chips.
Top it off with the remaining half of the other ingredients.
Bake in a preheated oven for 15 minutes at 350 F.

2. Loaded BBQ Chicken Nachos

Ingredients:

• 2 chicken breast (finely diced)
• 1 tbsp canola oil
• 1/2 tbsp salt
• 1/2 tbsp pepper
• 1 tbsp garlic powder
• 1 tbsp chili powder
• 3/4 cup barbecue sauce

• 13 oz Tortilla chips
• 2 cups shredded mixed cheese
• 1/2 red onion (sliced)
• 1 diced tomato
• 8 bacon strips (cooked and crumbled)
• 2 tbsp chopped parsley

Instructions:

Set a frying pan over medium-high heat.
Heat 1 tbsp canola oil.
Cook finely diced chicken breast.
Season with 1/2 tbsp salt, 1/2 tbsp pepper, 1 tbsp garlic powder, and 1 tbsp chili powder.
Stir well and cook until chicken is tender.
Add 3/4 cup barbecue sauce.
Mix well and let it simmer.
Remove from heat.

Set a large pan or skillet.
Lay half of the tortilla chips.
Spread half of the barbecue chicken mixture on top, followed by half of the other ingredients – shredded mixed cheese, sliced red onion, diced tomato, bacon bits, and chopped parsley.

Ingredients:

• 9 oz tortilla chips
• 1 lb cooked ground beef
• 1/2 cup barbecue sauce
• 2 cups shredded cheddar cheese
• 1 cup shredded mozzarella cheese
• 1/2 diced tomatoes
• 1/2 sliced red onions
• cooked bacon bits
• 1/2 cup chopped parsley

Instructions:

Set a large pan or skillet.
Place half of the tortilla chips in it.
Top it off with half of the cooked ground beef, followed by half of the other ingredients – barbecue sauce, shredded cheddar and mozzarella cheese, diced tomatoes, sliced red onions, bacon bits, and chopped parsley.

4. Beer Brat Nachos

Ingredients:

• 1 lb bratwurst
• 3 cups beer
• 8 oz cream cheese
• 2 cups shredded cheddar cheese
• 1 tsp cayenne pepper
• 1 tbsp brown mustard

• 1 bag tortilla chip
• 1/2 cup diced white onion
• 1/2 cup diced green onion
• 1/2 cup diced tomatoes
• 1/2 cup pickled jalapenos

Instructions:

Set a large skillet over medium-high heat.
Cook 1 lb bratwurst and let both sides turn brown.
Add 3 cups of beer.
Reduce heat to medium-low.
Let it simmer for 20 minutes.
Remove cooked bratwurst.
Let it cool and slice bratwurst.
Set aside.

In the same skillet, continue cooking and add 8 oz cream cheese and 2 cups shredded cheddar cheese.
Stir until cheese melts and mixture is well combined.
Add 1 tsp cayenne pepper and 1 tbsp brown mustard.
Mix well.
Remove from the heat.

Assemble the beer brat nachos.
Place half of the tortillas on a plate.
Spread some of the beer and cheese mixture over the tortillas.

5. Chicken and Waffles Nachos

Ingredients:

• 2 cups buttermilk
• 1 tsp salt
• 1 tsp black pepper
• 4 chicken thighs (boneless, skinless, and cubed)

• 1 1/2 cups maple syrup
• 2 tbsp hot sauce
• 1 1/2 cups all-purpose flour
• 2 tsp black pepper
• 1/2 tsp chili powder
• 1/2 tsp paprika
• 1/2 tsp garlic powder
• 3 large eggs

• Canola oil
• 14 frozen waffles (quartered)
• 3 oz shredded cheddar cheese

Optional:
• 1/2 cup spicy maple syrup
• 1/2 cup sour cream
• 2 tbsp scallions (chopped)

Instructions:

In a mixing bowl, add 2 cups buttermilk, 1 tsp salt, and 1 tsp black pepper.
Mix well.
Add cubed chicken thighs.
Toss the chicken to coat well.
Put in the fridge for 1-2 hours.

In a pot, add 1 1/2 cups maple syrup, 2 tbsp hot sauce over medium heat.
Bring to a boil.
When it boils, remove it from the heat.
Set aside.

In another mixing bowl, add 1 1/2 cups all-purpose flour, 2 tsp black pepper, 1/2 tsp chili powder, 1/2 tsp paprika, and 1/2 tsp garlic powder.
Mix well.
Set aside.

In a small mixing bowl, beat 3 large eggs.
Set aside.

Remove the cubed chicken thighs soaked in buttermilk mixture.
Dip each chicken cube into the flour mixture and coat well.
Dip and coat into the egg wash.
Coat again with flour mixture.
Do this with all the chicken cubes.

Set a pot over medium-high heat.
Add canola oil and warm it up.
Deep fry quartered frozen waffles.

Ingredients:

• 2 lbs hanger steak
• 2 tsp salt
• 1 tsp black pepper

• 1 chopped green bell pepper
• 1 chopped red bell pepper

Ingredients:

• 2 lbs frozen tater tots
• salt and pepper to taste

For the buffalo chicken mixture:

• 2 1/2 cups rotisserie chicken (shredded, boneless and skinless)
• salt and pepper to taste
• 2 green onion (chopped)
• 3/4 cup buffalo sauce

For the cheese sauce:

• 1 1/2 cup cheddar cheese (shredded)
• 1 tbsp cornstarch
• 1 cup evaporated milk
• 1 tbsp buffalo sauce

For the garnishing:

• 1/4 cup blue cheese dressing
• 6 strips bacon (cooked and diced)
• 1 green onion (chopped)
• salt and pepper to taste

Instructions:

Place frozen tater tots on a parchment-lined baking tray.
Bake in a preheated oven of 420 F for 20-25 minutes.
Flip on the other side halfway through.
Once done baking, remove from the oven.
Transfer to a skillet or any container.
Sprinkle salt and pepper to taste.
Set aside.

For the buffalo chicken mixture:

In a mixing bowl, add shredded rotisserie chicken.
Season with salt and pepper to taste.
Add chopped green onion and buffalo sauce.
Mix well.
Set aside.

For the cheese sauce:

In another mixing bowl, add shredded cheddar cheese and cornstarch.
Mix well.
Set a pot over medium heat.
Add the cheese and cornstarch mixture.

• 1 cup lentils (rinsed)
• 2 cups vegetable stock
• 1 tsp salt

• 1 x 15 oz can corn (drain and rinsed)
• 1 x 15 oz can black beans (drain and rinsed)

• 1 lb tortilla chips
• 1 1/2 cups shredded Mexican cheese blend

• 1 cup diced tomatoes
• 1/2 cup diced red onion
• 2 chopped jalapenos
• 1/3 cup chopped cilantro
• guacamole

Instructions:

Set a large pot over medium-high heat.
Add 1 cup of rinsed lentils and 2 cups vegetable stock.
Season with 1 tsp salt, 1/2 tsp pepper, 2 tsp chili powder, 2 tsp cumin, 2 tsp garlic powder, and 1 tsp oregano.
Mix well.
Cover the lid and simmer for 35 minutes.
Once done, add 1 can corn and 1 can black beans.
Mix well.
Remove from the heat and transfer to a bowl.
Set aside.

Preheat oven to 350 F.

On a baking tray, place half of the tortilla chips.
Add half of the lentil mixture on top, followed by the Mexican cheese blend.
Add the remaining half of tortilla chips, lentil mixture, and Mexican cheese blend.

Ingredients:

For the spice mix:

• 1 tsp salt
• 2 tsp pepper
• 1 tsp onion powder
• 1 tsp paprika
• 1 tsp garlic powder
• 1 tsp chili powder
• 1 tsp cumin

For the potato:

• 3 medium russet potatoes
• 2 tsp salt

For the steak:

• 1 lb skirt steak
• 1 tbsp canola oil
• 1 cup Mexican cheese blend

For the dips:

• pico de gallo
• guacamole
• sour cream

Instructions:

For the spice mix:

In a bowl, add all seasonings for the spice mix.
Mix well and set aside.

For the potato:

Preheat oven to 300 F.

Wash the potatoes thoroughly.
Thinly slice the potatoes using a sharp knife or mandolin.
Place in a large bowl and fill with water.
Wash and drain.
Sprinkle salt and mix well.
Drain excess water.
Sprinkle half of the spice mix into the potato bowl.
Mix well.
Invert a muffin tray.
Insert a seasoned potato slice in between muffin cups to make taco shells.
Place inside the oven and bake for 25 minutes.

For the steak:

While potato tacos are baking, season spice mix on 1 lb skirt steak.
Set a skillet over high heat.
Add 1 tbsp canola oil and warm it up.
Fry the seasoned skirt steak for 3 minutes on each side.
Once it cooks, remove from the skillet and transfer to a chopping board.
Let it cool for 10 minutes.
Chop into bite-size pieces.
Set aside.

Assembly:

Once potato slices are baked, remove them from the oven.
Sprinkle Mexican cheese blend in each potato taco.
Place bite-sized steak on each potato taco.
Place inside the oven and bake for 5 minutes.
Remove from the oven and transfer to a serving plate.

• 1/2 onion (sliced)
• 1 cup Monterey jack cheese (shredded)
• 1 cup cheddar cheese (shredded)

• 1 tbsp wholegrain mustard
• 1 tbsp dijon mustard
• 2 tbsp honey
• 1 tbsp olive oil

• 1/2 cup halved cherry tomato (optional for garnishing)
• 1 sliced avocado (optional for garnishing)
• 2 sliced scallions (optional for garnishing)
• sour cream (optional for garnishing)

Instructions:

Preheat oven to 450 F.

Place 2 lbs of frozen tater tots on a parchment-lined baking tray.
Bake for 20 minutes.
Once done, remove from the oven.
Set aside.

In a mixing bowl, add 4 boneless chicken thighs.
Season with 1 tbsp wholegrain mustard, salt, and pepper to taste.
Add 1 tbsp olive oil.
Mix well.
Set a skillet over high heat and add 2 tbsp olive oil.
Fry the chicken thighs for 4 minutes on each side or until golden brown.
Once cooked, remove from the skillet.
Transfer to a plate and let it cool.
Slice cooked chicken into bite-sized pieces.
Set aside.

In the same skillet, saute sliced onion until translucent.
Once soft, transfer to a plate.
Set aside.

In a small bowl, add 1 tbsp wholegrain mustard, 1 tbsp dijon mustard, 2 tbsp honey, and 1 tbsp olive oil.

In the same skillet, wipe off excess oil.

Add sauteed onions.
