1. Banana Oatmeal Breakfast Cookies

Ingredients:

• 1 ripe banana
• 1.5 cups gluten-free rolled oats (divided)
• 2 tbsp applesauce (unsweetened)
• 1 tsp baking powder
• 1/2 tsp cinnamon
• 1/4 tsp sea salt
• 1/3 cup walnuts (chopped)
• 1 tbsp maple syrup (optional)

Instructions:

In a food processor, add half of the gluten-free rolled oats.
Push until it fine pieces form.
Transfer the oats flour into a bowl and set aside.

Preheat oven to 350 F.

Prepare a mixing bowl.
Add a ripe banana and mash using a fork.
Add unsweetened applesauce.
Add the rest of the gluten-free rolled oats and the oats flour.
Season with cinnamon and sea salt.
Add baking powder.
Mix until well combined.
Once the mixture is thick, add chopped walnuts.
Mix well.
Get a scoop from the mixture and place on a parchment-lined baking tray.
Flatten to make a cookie.
It makes six cookies.
Place inside the preheated oven.

Ingredients:

• 2 cups rolled oats

• 1/4 cup nut butter (sunflower or peanut butter as alternative)
• 1/2 cup dairy-free milk
• 1 tsp vanilla extract
• 1 tbsp apple cider vinegar
• dairy-free chocolate chips (optional for toppings)

Instructions:

Preheat oven to 350 F.

In a food processor, add rolled oats.
Push until fine pieces form.
Transfer oats flour to a bowl.
Add cacao powder, baking powder, and baking soda.
Season with salt.
Mix until well combined.
Set aside.

In another mixing bowl, add overripe bananas and mash them.
Add coconut sugar and dairy-free milk.
Drizzle with vanilla extract and apple cider vinegar.
Mix until well combined.
Add into the oats flour mixture.

Ingredients:

• 2 tbsp ground flax seeds (ground chia seeds as alternative)
• 6 tbsp water
• 3 medium overripe bananas
• 1/2 cup coconut sugar
• 1/4 cup nut butter (peanut butter as alternative)
• 1 tsp vanilla extract
• 2 tsp apple cider vinegar
• 2.5 cups rolled oats (divided)
• 2 tsp baking powder
• 1 tsp baking soda

Instructions:

Preheat oven to 350 F.

In a food processor, add half of the rolled oats.
Push until fine pieces form.
Transfer oats flour into a bowl.
Set aside.

In another bowl, mix ground flax seeds and water.
Set aside.

In a mixing bowl, mash overripe bananas.
Add coconut sugar and nut butter.
Season with vanilla extract and apple cider vinegar.
Add the flax seeds mixture into the bowl.
Mix until well combined.
Set aside.

In another mixing bowl, add oats flour.
Add the rest of the rolled oats, baking powder, and baking soda.
Mix until well combined.
Transfer into the mashed banana mixture.
