1. Crepe Egg Roll

Ingredients:

For the batter:

• 1 egg
• 1/4 tsp salt
• 1 cup milk
• 3/4 cup flour
• 1/4 tsp baking powder

For the egg and vegetable mixture:

• 2 eggs
• 1/4 tsp salt
• 1/4 cup chopped onion
• 1/2 cup chopped tomato
• 1 tbsp coriander leaves
• 2 pcs chopped green chili
• 1/4 tsp chaat masala

• 1 tbsp butter
• 2-3 tbsp shredded mozzarella cheese

Instructions:

For the batter:

In a medium mixing bowl, add one egg, 1/4 tsp salt, and 1 cup milk.
Whisk until well combined.
Add 3/4 cup flour and 1/4 tsp baking powder.
Whisk until the mixture has no lumps.
Set aside.

For the egg and vegetable mixture:

In another mixing bowl, add two eggs, 1/4 tsp salt, 1/4 cup chopped onion, 1/2 cup chopped tomato, 1 tbsp coriander leaves, 2 pieces chopped green chili, and 1/4 tsp chaat masala.
Mix until well combined.
Set aside.

Set a large non-stick frying pan over low heat.
Melt 1 tbsp butter.
Pour the batter and cook for two minutes to form the crepe.
Add the egg and vegetable mixture.
Spread over the batter and cook for three minutes.
When the eggs are cooked, flip on the other side.
Cook for another 2-3 minutes.
Flip again and top it off with shredded mozzarella cheese.
Cover the lid.
Let it cook for another 2-3 minutes until cheese melts.
Remove from the pan and transfer to a plate.
Roll it while it’s still hot.
Let it set for a few minutes.
Cut in half.
Serve and enjoy!

2. Egg Muffin

Ingredients:

• 4 eggs
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1/4 cup chopped tomato
• 1 medium onion (diced)
• 3 green chili (sliced)
• 1 medium carrot (grated)
• 1 tbsp finely chopped coriander leaves
• 1/4 cup grated mozzarella cheese
• 1 tbsp boiled sweet corn
• oil for greasing

Instructions:

In a medium mixing bowl, crack open 4 eggs.
Season with 1/2 tsp salt and 1/4 tsp black pepper.
Whisk until well combined.
Add chopped tomato, diced medium onion, sliced green chilies, grated medium carrot, finely chopped coriander leaves, boiled sweet corn, and grated mozzarella cheese.
Whisk until well combined.
Set aside.

Prepare a muffin tray.
Lightly grease cups with oil.
Fill each muffin cup with egg and vegetable mixture.
Place inside a preheated oven at 180 C.
Bake for 10-15 minutes.
Once done, get the muffin tray out from the oven.
Remove each egg muffin from each cup.
Serve and enjoy!

3. Egg Pakora

Ingredients:

• 3 hard-boiled eggs
• 1/2 cup gram flour
• 2 tbsp rice flour
• 1/2 tsp salt
• 1/2 tsp chili powder
• 1/4 tsp turmeric powder
• 1/4 tsp cumin powder
• 1/4 tsp ginger powder
• 1/4 tsp garlic powder
• 1/4 tsp garam masala
• 2 tbsp diced onion
• 2 tbsp finely chopped coriander leaves
• some water
• oil for frying

Instructions:

Set aside 3 hard-boiled eggs and let it cool down.

In a medium mixing bowl, add gram flour and rice flour.
Season with salt, chili powder, turmeric powder, cumin powder, ginger powder, garlic powder, and garam masala.
Add diced onion and finely chopped coriander leaves.
Gradually add some amount of water to make a thick paste.
Continue whisking while adding the water until well combined.
Texture should be like a thick paste.
Place inside the fridge for 20 minutes.

Slice the hard-boiled eggs into four.
Dip and coat into the paste mixture.
Set a frying pan over medium heat.
Add oil and warm it up.
Fry the egg pakora until golden brown.
Remove from the pan and transfer to a plate.
Serve with a variety of dips.

4. Egg Fingers

Ingredients:

• 3 eggs
• 1/2 tsp salt
• 1/2 tsp black pepper
• oil for greasing

• 1 egg (beaten)
• 1/4 cup flour
• 1/4 tsp red chili powder
• 1/4 tsp chaat masala
• 1/4 tsp black pepper
• 1/4 tsp mixed herbs
• 1/4 tsp salt
• breadcrumbs
• oil for deep frying

Instructions:

In a medium mixing bowl, crack open 3 eggs.
Season with 1/2 tsp salt and 1/2 tsp black pepper.
Whisk until well combined.
Set aside.

Prepare a 5-inch pan.
Brush some oil.
Pour the egg mixture into it.
Steam on medium heat for 8-10 minutes.
Transfer to a chopping board.
Slice into thin fingers.
Set aside.

Prepare the flour mixture.
In a small mixing bowl, add 1/4 cup flour.
Season with 1/4 tsp red chili powder, 1/4 tsp red chili powder, 1/4 tsp chaat masala, 1/4 tsp black pepper, 1/4 tsp mixed herbs, and 1/4 tsp salt.
Mix well.

Prepare the beaten egg in a bowl.

Prepare the breadcrumbs in another bowl.

Dip and coat each egg finger on the flour mixture.
Next, coat with the beaten egg.
Lastly, coat with breadcrumbs.
Deep fry into a frying pan over medium heat.
Transfer to a plate once done frying.
Serve with your favorite dip.
