Amazing Roasted Crispy Potatoes Recipe

Roasting potatoes is a very simple recipe to do, yet very delicious. Only a few ingredients are needed, which primarily highlights thinly sliced potatoes. This is a super easy and tasteful side dish for any meal.

Ingredients:

• 4 lbs. russet potatoes (peeled and sliced thinly)
• 4 shallots (thickly sliced lengthwise)
• 3 tbsp extra virgin olive oil
• 3 tbsp unsalted butter (melted)
• Coarse salt
• 8 sprigs thyme
• 1 teaspoon red pepper flakes (optional)

Instructions:

This recipe takes about 2 hours and 15 minutes. Serves 6-8.

Preheat oven to 375 F.

Thinly slice the peeled potatoes, recommended to use mandoline to achieve super thin slices.
Mix melted butter and olive oil.
Prepare a small to medium baking dish.
Coat the bottom with the mixture.
Arrange the potato slices in the dish.
Sprinkle salt in between layers and the whole top.
Sprinkle red pepper flakes, this is optional.
Add shallots in the arrangement.
Brush the remaining melted butter and olive oil mixture all over the top.
Bake it for 1 hour and 15 minutes.
Add thyme sprigs.
Bake for another 30 minutes or until the potatoes are golden brown.
Remove and serve.
