Ani Phyo’s Raw Food Kitchen: Spanish Breakfast Scramble

Breakfast is the most important meal of the day. This recipe puts a raw twist on the classic Spanish scramble dish. This dish has no eggs, no bacon, and no cooking involved!

Whip up this delicious breakfast dish in 5 minutes! Just throw the ingredients in a food processor, add in some tomatoes and a few more ingredients, and that’s it. Perfect with your morning cup of coffee.

Ingredients:

• 1 cup of dried almonds
• Half a cup of dried sunflower seeds
• 1 tsp of turmeric
• 1/4 tsp of salt
• Half a cup of filtered water
• Half a cup of tomatoes, diced
• 1/4 cup of roughly chopped cilantro
• 2 tbsp of chopped scallions
• Half a cup of spinach leaves
• Finely ground pepper

Instructions:

This recipe takes about 5 to 6 minutes to make. Serves 2 to 3.

In a food processor, add almonds, sunflower seeds, turmeric, and salt. Blend together until all the ingredients turn fine.
Gradually add the water to turn into a paste.
Transfer the paste into a big bowl.
Add tomatoes, cilantro, and scallions. Mix well.
Make a bed of spinach leaves on a plate.
Scoop the scramble on top of the spinach leaves.
Garnish with pepper and edible flowers.

Ideas And Tips:

• To get the best results, soak your almonds in water for about an hour. Dry them off before you throw them in the food processor.

• You can also add more vegetables to this recipe. Try some sweet potatoes, bell peppers, zucchini, or kale.
