Breakfast Egg Cake Muffins

Ingredients:

• 2 eggs
• 3/4 cup of flour
• 4 tbsp of salted melted butter
• 4 tbsp of milk
• 1/3 cup of granulated sugar
• Half a tsp of baking powder
• Salt
• 6 to 8 eggs for toppings

Instructions:

This recipe takes about 40 minutes to make. Serves 10.

Preheat the oven to 375F.
In a bowl, crack 2 eggs and whisk until it becomes foamy.
Add sugar with the eggs and whisk until it has dissolved completely.
Carefully sift flour and baking powder into the bowl.
Pour milk and melted butter. Whisk together until well mixed.
Use a brush to grease the muffin tray on all sides.
Scoop 2 to 3 tablespoons of batter into the muffin tray. It should be approximately 1/4 inch.
Carefully crack open an egg on top of the batter. Every muffin should have an egg on top.
Bake in the oven for about 25 to 30 minutes.
Season egg topping with salt.
