Eggs With Potatoes And Tomatoes – Easy Afghani Omelette | Easy Breakfast Recipe

Ingredients:

• 1/4 cup oil
• 1 cup potatoes (diced)
• 1/2 cup red onion (diced)
• 1 cup tomatoes (diced)
• 1/2 tsp salt + more
• 1/2 tsp black pepper + more
• 4-5 eggs
• some chopped coriander leaves (for garnishing)
• 3-4 green chilies (for garnishing)

Instructions:

Set a large saucepan over medium heat.
Add oil and heat it.
Add diced potatoes and fry for 2-3 minutes.
Add diced red onion and fry for another 2 minutes.
Add diced tomatoes.
Season with 1/2 tsp salt and 1/2 tsp black pepper.
Stir and cook to combine.
Cover the saucepan and reduce to low heat.
Let it cook for 6-7 minutes or until soft.
Add 4-5 eggs.
Season with salt and pepper to taste.
Garnish with chopped coriander leaves.
Add 3-4 green chilies.
Cover the saucepan and let it cook for 7-8 minutes.
Once done, remove from the heat.
Slice in equal portions.
