Fattoush Salad (Healthy Salad) Recipe

Fattoush is a Mediterranean bread salad which originated in Northern Lebanon. It is made from fried left-over pita scraps, mixed with any in-season vegetables and herbs. It is traditionally regarded as an essential part of a Mediterranean or Middle Eastern meal. The vegetables used in the salad may vary but the distinct flavor comes from sumac.

Ingredients:

• 1 small Romaine lettuce, sliced
• 1 medium red onion, chopped
• 2 medium tomatoes, diced
• 3 medium cucumbers, diced
• 85 grams of pitted black olives, sliced
• ½ cup of chopped Italian parsley
• ¼ cup of chopped mint leaves
• 2 radishes, thinly sliced
• 1 toasted pita bread
• sumac
• dried basil

Vinaigrette:

• ¼ cup of olive oil
• 1 tbsp Dijon mustard
• 2 tbsp white wine vinegar
• ¼ tsp salt
• ¼ tsp black pepper powder

Yogurt Sauce:

• ¾ cup of plain yogurt
• 2 tbsp tahini
• juice of 1/3 lemon
• ¼ tsp salt
• ⅛ tsp black pepper powder
• 28 grams of chopped fresh dill

Instructions:

This recipe takes about 20 minutes to make. Serves 4 to 5.

Put lettuce, red onion, tomatoes, cucumbers, black olives, parsley, mint leaves, and radish in a large salad bowl.
In a separate bowl, whisk together olive oil, Dijon mustard, white wine vinegar, salt, and black pepper powder.
Pour vinaigrette over vegetables and toss.
Crumble toasted pita bread and add to the salad.
Toss and set aside.
In a bowl, whisk together yogurt, tahini, lemon juice, salt, black pepper powder, and dill.
Transfer salad to a serving plate.
Sprinkle some sumac on top.
Drizzle yogurt sauce, then add a dash of dried basil on top.
