Fish Recipes: How To Make Perfect Baked Cod

The crushed buttery-crackers on top add an exciting crunch in every bite. The wine gives the dish an amazing flavor and aroma. To make the meal complete, serve the baked cod fillets with sautéed spinach and rice pilaf.

Ingredients:

• 2 tbsp butter, melted
• 1 cup of crushed Ritz crackers
• 1 pound of thick-cut cod loin fillets
• 2 tbsp butter, softened
• 1/4 tsp salt
• 1/4 tsp ground black pepper
• 1/2 lemon, juiced
• 1/4 cup dry white wine
• 1 tbsp chopped fresh parsley
• 1 tbsp chopped green onions
• 1 lemon, cut into wedges

Instructions:

This recipe takes about 35 to 40 minutes to make. Serves 4.

Preheat oven to 400°F.
Mix melted butter and crushed crackers in a bowl.
Grease a 9″x11″ baking dish with butter.
Place the baking dish in the oven for 1 to 3 minutes just to melt the butter.
Place the fish fillets in the baking dish and turn to coat with butter.
Season fish fillets with salt and pepper.
Bake in the preheated oven for 10 minutes.
Take the baking dish out from the oven.
Pour lemon juice and white wine on top of the fish.
Spread and press crushed crackers on top of the fish.
Bake in the oven for 10 more minutes.
Transfer the baked cod fillets to a serving dish.
Sprinkle parsley and spring onions on top.
Serve with lemon wedges on the side.
