Frittata — The Perfect Egg Dish

Frittata is a delicious breakfast egg dish. This dish, which looks like an omelette, originated from Italy. The frittata can be cooked with leftover veggies such as steamed broccoli, chopped shallots, and dill. Add some grated cheese for added flavor. This recipe only takes about 10 minutes to prepare.

Ingredients:

• 2 tbsp olive oil
• 2 shallots (sliced)
• 3 prosciutto slices (sliced into bits)
• 1/2 cup broccoli (chopped into small pieces)
• some chopped dill
• 6 eggs
• a splash of milk
• 2 oz smoked gouda cheese (grated)
• freshly ground black pepper to taste

Instructions:

In a mixing bowl, add six eggs.
Pour a splash of milk.
Whisk to combine.
Season with freshly ground black pepper to taste.
Add half of the grated gouda cheese.
Whisk to combine.
Set aside.

Set a non-stick skillet over medium heat.
Add 2 tbsp of olive oil and heat it.
Add sliced shallots into the skillet.
Saute until shallots are soft.
Add sliced bits of prosciutto.
Saute and cook until prosciutto is crisp.
Add chopped broccoli and dill.
Stir and cook to combine.
Add the egg mixture.
Stir and spread evenly in the skillet.
Sprinkle the rest of the grated gouda cheese.
Place it inside the broiler on low setting for 2 minutes.
Turn the broiler on high setting for a minute.
Once done, remove from the broiler and let it cool for a few minutes.
Transfer to a plate.
Slice to equal portions.
Serve and enjoy!
