Healthy Oat & Mixed Vegetable Cutlets – Delicious Indian Snack Recipe

If you want to serve a healthy after-school snack to your kids, this recipe is perfect. You can serve the cutlets with a dipping sauce or use them as a sandwich filling, along with coleslaw or sliced lettuce, tomatoes, and pickles. The mixture of herbs and seasonings makes these oats and mixed vegetable cutlets very tasty. You can even serve them with steamed rice.

Ingredients:

• 1 cup of oats
• 1 tbsp water
• 2 tbsp olive oil
• 1 small onion, chopped
• 2 tsp ginger-garlic paste
• 1 small bell pepper, finely chopped
• ½ cup of shredded carrots
• ½ cup of chopped spinach
• ½ tsp black pepper
• ½ tsp oregano
• 1 tsp thyme
• 1 tsp red chili flakes
• ¼ tsp salt
• 1 tbsp chopped fresh coriander
• 1 egg, beaten
• 1 cup of fresh breadcrumbs
• ¼ cup vegetable oil

Instructions:

This recipe takes about 30 minutes to make. Serves 6.

In a bowl, soak oats in water and set it aside.
Heat oil in a wok over medium heat.
Add onions and sauté for 1 minute.
Add ginger-garlic paste and bell peppers, then sauté for another minute.
Add carrots, spinach, black pepper, oregano, thyme, and red chili flakes.
Sauté for 2 to 3 minutes.
Add soaked oats and mix well.
Add salt and coriander, then continue cooking for 1 to 2 minutes.
Turn off heat and let the mixture cool for 5 to 10 minutes.
Mix in breadcrumbs and beaten egg.
Take 2 tbsp of the mixture and form it into a patty.
Repeat this step for the rest of the mixture.
Heat oil in a frying pan over medium heat.
Fry patties for 3 to 4 minutes on each side.
Place patties on a plate lined with paper towel to drain excess oil.
Serve with your favorite dip.

Ideas And Tips:

• You can also add bean sprouts or other shredded vegetables such as turnips, sweet potatoes, potatoes or green beans.

• If you are serving this dish to the kids and don’t want it spicy, you can skip the chili flakes.

• You can also add shredded cheese to make the cutlets creamier and tastier.
