How To Grill Or Bake A Fish

Grilling and baking are great cooking methods that do not require a lot of oil. Slowly cooking the fish in its juices keeps it savory and healthy. This simple recipe shows how easy it is to grill a fish, and has a fresh salad recipe to go with it. This grilled fish recipe is easy to make and keeps the natural fish flavor intact.

This recipe takes about 70 minutes to prepare, including marinade time for the fish. Serves 2.

Ingredients:

• 1 whole snook
• 3 bay leaves
• 1 garlic clove
• 3 lemon slices
• Juice of 1 lemon
• Extra virgin olive oil
• Salt
• Pepper

Tomato And Basil Salad:

• 2 to 3 tomatoes, thinly sliced
• 1 onion, thinly sliced
• 2 to 3 tbsp of extra virgin olive oil
• Handful of basil leaves
• 2 tsp of Dijon mustard
• 1 tbsp of lemon juice
• 2 tsp of chopped rosemary
• 2 tsp of grated orange
• Half a tsp of black pepper

Instructions:

Rinse the fish and let it dry.
Slice the fish diagonally to make 3 openings.
Insert the bay leaf, lemon slice, and garlic in each slot.
Sprinkle with salt and pepper.
Drizzle lemon juice and olive oil.
Let the fish marinade for 1 hour.
Grill the fish for 3 minutes on each side.
In a bowl, mix olive oil, lemon juice, and garlic. Use rosemary to coat the fish with this sauce while grilling.

To make the salad dressing, add Dijon mustard, lemon juice, rosemary, grated orange and pepper in a bowl. Whisk together.
In a separate bowl, add tomatoes, onion, and basil leaves. Drizzle with olive oil, and then mix your dressing.
