How To Make Falafel And Hummus (Middle Eastern Delicacy)

Falafel is a Mediterranean dish made from ground chickpeas or fava beans. The chickpea “dough” is formed into a ball or patty and deep-fried. Falafel is a traditional Middle Eastern food commonly stuffed into a pita pocket or flatbread. Fried falafel is usually topped with salads, pickled vegetable or sauces. Another way also of serving falafel is with hummus as a dip.

This recipe gives you an easy way of preparing falafel and hummus at home. This dish is great as an appetizer or side dish. Serve this healthy dish when you are expecting guests at home.

Ingredients:

Hummus:

• 2 cups of soaked and boiled chickpeas
• 1 cup of sesame seeds
• 1 cup of olive oil
• 4 cloves garlic
• ¼ tsp salt
• 1 tsp lemon juice

Falafel:

• 1 cup soaked chickpeas
• ½ cup parsley
• ¼ cup coriander
• 1 medium onion, minced
• 3 cloves garlic
• ¾ tbsp cumin
• 1 tsp salt
• ½ tsp baking soda
• 2 cups of oil

Garnish:

• 1 tbsp extra virgin olive oil
• paprika
• fresh coriander springs
• 6 pieces boiled chickpeas

Instructions:

This recipe takes about 45 minutes to make. Serves 10 to 12.

To prepare the hummus, put all the ingredients chickpeas, sesame seeds, olive oil, garlic, salt, and lemon juice in a blender.
Blend well until you get a smooth paste.
Pour hummus into a bowl and drizzle olive oil on top.
Let it chill in the refrigerator while you prepare the falafel.
To make the falafel, mix all the ingredients in a large mixing bowl chickpeas, parsley, coriander, onion, garlic, cumin, salt, and baking soda.
Blend mixture in a blender in 3 to 4 portions to make sure that everything is well blended.
Put falafel mixture into a bowl and mix well.
Heat in a frying pan over medium heat.
Form falafel into small patties and fry in batches until golden brown.
Put falafel on a plate lined with paper towel to drain excess oil.
To serve, put chilled hummus in the center of the plate and put a well on the center of the hummus.
Drizzle oil on the well and put boiled whole chickpeas on top of the hummus.
Dip a fork in paprika and lightly press on the sides of hummus.
Arrange falafel around the hummus and garnish with fresh coriander sprigs.

Ideas And Tips:

• If the hummus is too thick, add oil. Do not add water to thin out the hummus.

• You can also use fava beans on your falafel. Use ½ cup of chickpeas and ½ cup of fava beans.
