How To Make Portobello Mushroom Steak & Roasted Garlic Mashed Potatoes

This is a well-balanced meal; as the mushrooms serve as the protein source while the carbohydrates come from the mashed potatoes. With this meal, you will also get vitamins B and C, manganese, phosphorus, niacin, pantothenic acid, thiamin, folate, magnesium, zinc, riboflavin, potassium, copper, selenium, and dietary fiber. Balsamic vinegar, which is used in the marinade, gives the Portobello mushrooms an exciting sweet-tart flavor, while the roasted garlic adds a depth of flavor to the mashed potatoes.

Ingredients:

• 3 Portobello mushrooms
• 1 head garlic
• 1 tsp olive oil
• 8 medium potatoes, quartered
• ¾ cup of margarine
• 2 cloves garlic, chopped
• ½ cup of soy milk
• 1 tsp steak seasoning
• ¼ tsp salt
• ¼ tsp ground black pepper

Marinade:

• 4 cloves garlic, chopped
• ¼ onion, sliced
• ¼ cup of olive oil
• ¼ cup of balsamic vinegar

Instructions:

This recipe takes about 1 hour to make. The mushrooms need to marinate for 1 hour. Serves 3.

In a large dish, mix garlic, onion, olive oil, and balsamic vinegar to make the marinade.
Remove the stems from the Portobello mushrooms, then put them in the marinade.
Marinate the mushrooms for 30 minutes on each side.
Slice off part of the head of the garlic.
Drizzle olive oil on the garlic an wrap it in an aluminum foil.
Bake in the oven at 450°F for 30 minutes.
Put potatoes in a pot, then cover with enough water.
Add garlic and boil over high heat for 10 minutes.
Drain potatoes and put them back in the pot.
Add margarine, then lightly mash the potatoes.
Pour in soy milk and continue mashing.
Add peeled roasted garlic, steak seasoning, salt, and black pepper.
Continue mashing until smooth.
Preheat a pan over medium-high heat.
Grill mushrooms for 3 to 4 minutes on each side.
Transfer Portobello mushroom steak to a serving dish, then spoon some roasted garlic mashed potatoes on the side.

• You can also add chopped herbs to the mashed potatoes like green onion, parsley, thyme or rosemary.

• You do not need to put oil in the pan before grilling the mushrooms, as the marinade has olive oil in it.
