Japanese Omelette

Breakfast is the most important meal of the day. What we eat at breakfast sets the energy levels we need for the day. Eggs are rich in protein and essential vitamins. There are so many ways to cook eggs.

This recipe brings you the flavors of Japanese cuisine. Seasoned with mirin and bonito stock, this omelette is light, savory, and delicious.

Ingredients:

• 8 eggs
• 30 grams of sugar
• 3 grams of salt
• 1 tsp of Mirin
• 1 tsp of sake
• 180 ml of bonito stock
• Cooking oil

Instructions:

This recipe takes about 15 minutes to make. Serves 6.

In a large bowl, crack open 8 eggs.
Using a separate bowl, mix sugar, salt, mirin, sake, and bonito stock.
Stir with a spoon.
Add this mixture with the eggs.
Beat the mixture.
Heat frying pan up to 356F.
Make sure that the cooking oil coats the bottom and sides of the pan.
Scoop a few tablespoons of egg onto the pan.
After 1 to 2 minutes, fold the egg into a roll. Move the egg roll into one side of the pan.
Pour a few tablespoons of egg into the pan and repeat the process until all of the egg mixtures has been cooked.
Keep folding the egg until you have a big block of omelette.

• Mirin is a condiment used in Japanese cuisine. Similar to sake, it is a rice wine that has lower alcohol content but higher sugar content. Mirin is usually added to fish to remove that fishy smell. It is also used in teriyaki sauce.

• Bonito stock is the most commonly used stock in Japanese cuisine. It is made from katsuobushi, which is a dried and fermented skipjack tuna. This broth is the base for many dishes such as miso and sauces such as soba.
