Lazy Vegan Dessert Ideas!

Prepare these three quick and easy vegan dessert ideas for the weekend! Each recipe only takes a few minutes to prepare. Enjoy these yummy vegan desserts with your friends either after dinner or as snacks!

1. Peanut Butter Blueberry Cookie

Ingredients:

Peanut Butter Mix:

• 1 tsp coconut oil
• 1 tsp peanut butter
• 1/4 tsp vanilla
• 1 tbsp agave syrup
• 1 tsp raw sugar

Other Ingredients:

• salt to taste
• baking powder to taste
• 1 tbsp almond milk
• 3 tbsp spelt flour
• 6-7 blueberries (fresh or frozen)

Instructions:

This recipe serves one.

Preheat oven to 180 C.

Prepare an oven-proof bowl.
Add coconut oil, peanut butter, vanilla, agave syrup, and raw sugar.
Place it inside the preheated oven for 2-3 minutes or until melted.
Once done, remove it from the oven.
Stir the mixture.
Add the rest of the ingredients – salt, baking powder, almond milk, and spelt flour.
Stir to combine.
Transfer the mixture into a ramekin dish.
Top it off with blueberries.
Place inside the oven for 12-15 minutes.
Once done, remove it from the oven and let it cool.
Enjoy!

2. Grilled Chocolate & Raspberry Toast

Ingredients:

• some coconut oil (for greasing)
• 2 bread slices
• 1 tbsp vegan cream cheese
• 2 tbsp semi-sweet chocolate chips
• 2 tsp raspberry jam

Instructions:

This recipe serves one.

Set a frying pan over medium heat.
Grease with some coconut oil.
Add the bread slices to the pan.
While the slices are toasting, spread with vegan cream cheese on one of the slices.
Add raspberry jam, followed by semi-sweet chocolate chips.
Cover the pan.
Let it cook for 3 minutes or until chocolate melts.
Assemble the sandwich.
Slice in half.
Enjoy!

3. White Bean Chocolate Chip Cookie Dough

Ingredients:

• 1 can white beans (rinsed and drained)
• 1 cup oats
• 1/3 cup raw sugar
• 1/4 non-dairy milk
• 1/4 cup chocolate chips
• 2 1/2 tbsp coconut oil
• 3 tbsp agave syrup
• 1/4 tsp salt
• 1 tsp vanilla

Instructions:

This serves 4-6.

Add oats to a food processor.
Push until floured.
Season with salt, vanilla, and raw sugar.
Add agave syrup and coconut oil.
Pour non-dairy milk.
Add white beans.
Push until well combined.
Transfer to a bowl.
Add chocolate chips.
Mix well.
Enjoy!

You can also put it in the fridge before serving.
