Perfect Egg Rolls Recipe

Egg roll is a popular Korean side dish, a favorite lunch box item, and a common snack while drinking soju. They are locally called gyeran mari – where gyeran means egg and mari means rolled up. The ingredients used to make this dish are easily accessible; that’s why you’ll see egg rolls in every Korean household.

The egg roll is traditionally prepared in a rectangular omelet pan called makiyakinabe. In case you do not have one at home, this recipe will teach you how to make egg rolls using a round pan.

Ingredients:

• 3 eggs
• 1 tbsp milk
• 1 tbsp finely chopped carrot
• 1 tbsp finely chopped onion
• 1 tbsp finely chopped spring onion
• ½ tsp salt
• ¼ tsp freshly ground pepper for seasoning
• oil

Instructions:

This recipe takes about 20 minutes to make. Serves 2.

Crack open eggs into a large mixing bowl.
Pour in milk and sprinkle salt.
Whisk together until well blended.
Strain egg through a fine sieve.
Add in carrots, onions, spring onions, and pepper.
Stir until well combined.
Heat a 10-inch non-stick pan over medium heat.
Lightly grease the pan with oil.
Reduce heat to low.
Pour in half of the egg mixture.
Swirl the pan to evenly spread the egg.
Cook egg over low heat until half done.
Roll one side halfway through the omelet.
Carefully move the omelet to the middle of the pan.
Pour half of the remaining egg mixture onto the side of the unrolled omelet.
Cook until half-done halfway through the omelet again.
Carefully move the omelet to the middle of the pan.
Pour the remaining mixture onto the side of the unrolled omelet.
When half-done, roll omelet all the way to the edge.
Transfer egg roll to a cutting board and let it cool before slicing into bite-sized pieces.

Ideas And Tips:

• Passing beaten eggs through a fine sieve removes the white twisted strands, called chalaza, to give the beaten eggs a finer texture.

• If you feel that the egg is sticking to the pan while rolling, lightly brush oil on the surface of the pan.

• As the egg roll cools, it also firms up – so do not slice it while it is still hot, as it may fall apart.

• You may also add chopped zucchini, mushroom, ham, bacon, crabstick, tuna or shredded cheese.
